An Investigation on The Surumi Production From Processing of (Leuciscus cephalus) Fish Species
ABSTRACT : In this study the possibility of evaluation of Leuciscus cephalus processing as surumi, a traditional Japon product, was investigated. The mean yield rate value for rinsed, minced and unprocessed surumi were 52.83, 49.71, and 37.71 % respectively. At the end of chemical analysis from surumi the, crude protein, fat, ash and pH values were found as 18.88, 18.50, 1.03, 0.39 % and 6.72 respectively. The relationship between product rates and gonadosomatic indexes (GSI) and condition factors (K) were determined montly and were found insignificant (P> 0.05). As a result, surumi can be obtained from the Leicuscus cephalus.
