ÖZET: Bu araştırma, Erzurum Ovası'nda yetiştirilen yerli manda sütlerine ait genel bileşimin ve mineral madde düzeylerinin belirlenmesi
amacıyla gerçekleştirilmiştir. Analiz sonuçlarına göre, manda sütlerinde ortalama kurumadde oranı %I6,1811,27, yağ %6,60±l,52,
yağsız kurumadde %9,55±I,I6, protein % 4,54±0,83, kül %0,76±Û,07. titrasyon asitliği 7,3 l±l,45 SH ve maya ile pıhtılaşma süresi
4,CI2±1.16 dak. olarak saptanmıştır. İncelenen süt Örneklerinin ortalama Na, K, Ca, P, Mg ve Fe İçerikleri ise, sırasıyla 5Û,52±9,48,
!24,34±I8.36. I 65,22±25,01, 96.93+20,69, 13.05±l0,18 ve 1,1 l±0,37 mg/lÛÛg olarak bulunmuştur.

A STUDY ON THE PHYS1COCHEMICAL PROPERTIES OF DOMESTIC BUFFALO MİLK BREEDED İN ERZURUM PLA1N
SUMMARY: İn this study, the composition and mineral contents of 126 domeslic buffaio mllk samples vvere investigated. The average
results obtained vvere as follows: dry matter 16.18± 1.2786, fat 6.60± 1.5296. solid non-fat 9.55±I.16%, protein 4.54±0.83%, ash
0.76±0.07%, and also lltralable acidity (as lactic acid) 7.31 ±1.45 SH and rennet coagulation time 4.02±l.l6 min. On the other hand,
the mean values of Na, K, Ca, P, Mg and Fe contents of the milk vvere found as 5Û.52±9.48, I24.34±J8.36, !65.22±25.0l,
96.93120.69, 13.05± 10.18 and 1. 11±0.37 mg/IOOg respectively.
