The research on investigation of factors affecting the production process on cattle slaughtering line ina private sector slaughterhouse

Abstract

The aim of the research is to designate the possible measures, which are directed to increase slaughtering line efficiency, by specifying the relationships between the gender, the weight of carcass, fatty or non-fatty cut, the time of the cut and the carcass production of the cattle that have been cut in a slaughterhouse in Turkey. The materials of the research have been obtained from a slaughterhouse which has a capacity of 150 cattle/day and 1500 sheep/day, by the cutting of 49 cattle 25 of which were female and the remaining 24 were males. The data was analyzed by the using Kolmogorov-Smirnov, ANOVA, The Independent Samples-T and Pearson Correlation tests. The total cutting line operations of 49 cattle, the total cutting line process, the waiting time of each cattle in the line and the total process in the slaughterhouse were determined as 3006.1, 1750.1 and 1256.0 seconds respectively. For the cutting periods of morning and midday, the difference between the times of process was found significant (p<0.01). Moreover, the relationship between the weights of carcass which were evaluated of this research and the total process period was examined and a significant positive correlation with the coefficient (r=0.319) was found (p<0.05). In the process of total cutting line, the share of waiting time in the slaughtering line is 58.2%. Consequently, the presence of obsolescent technology usage and inappropriate and non-ergonomic cutting line design and construction in the slaughterhouse caused to increase of inefficient time and expend more effort by work force. In this context, it is thought that studies of improving the technology level and line constructions in slaughterhouses in Turkey which can be contributed to increase in labour productivity and shortening the time of production processes

Özel sektöre ait bir et kombinası sığır kesim hattında üretim sürecine etkili faktörlerin incelenmesi üzerine bir araştırma

Abstract

Araştırmanın amacı; Türkiye’de özel sektöre ait bir kombinada kesimi yapılan sığırların; cinsiyetleri, sıcak karkas ağırlıkları, kesimin yağlı ya da yağsız şekilde yapılması ve kesim zamanı vb. faktörler ile karkas üretim süresi arasındaki ilişkileri ortaya koyarak, sığır kesim hattında etkinliğin artırılmasına yönelik alınabilecek önlemleri belirlemektir. Araştırmanın materyalini; kurulu kapasitesi 150 büyükbaş/gün ve 1500 küçükbaş/gün olan bir kombinada, 25’i dişi, 24’ü erkek 49 baş kasaplık sığırın kesiminde yapılan zaman ölçümleri sonucunda elde edilen veriler oluşturmuştur. Araştırmada elde edilen verilere KolmogorovSmirnov, ANOVA, Independent Samples-T ve Pearson Correlation testleri uygulanmıştır. Kombinada 49 baş sığırın kesim işleminin toplam kesim hattı, hat’ta bekleme ve toplam işlem süresi sırasıyla 3006.1, 1750.1 ve 1256.0 sn tespit edilmiştir. Sabah ve öğleden sonra yapılan kesimlerin işlem süreleri arasındaki fark anlamlı bulunmuştur (p<0.01). Ayrıca değerlendirilen karkasların ağırlıkları ile toplam işlem süresi arasında anlamlı pozitif korelasyon (r=0.319) tespit edilmiştir (p<0.05). Toplam kesim hattı süresi içerisinde, hat’ta bekleme süresinin payı %58.2’dir. Kombinada kullanılan teknolojinin ve kesim hattı tasarımının endüstriyel gelişme ve ergonomik yapıya uygun olmamasının, kesim hattında verimsiz geçen süreyi artırdığı ve işgücünün fazla efor harcamasına neden olduğu sonucuna varılmıştır. Bu bağlamda, Türkiye’de mevcut kombinaların kesim hattı teknolojik düzeylerinin ve hat tasarımlarının iyileştirilmesi çalışmalarının, işgücü verimliliğinin artırılması ve üretim işlemlerinin kısaltılmasına katkı sağlayacağı düşünülmektedir
