Bazı Domates Çeşitlerinin Şıraya Uygunluğu Üzerinde Bir Araştırma

Abstract

Çalışmada, Yalova koşullarında verim denemeleri yürütülen 22 uzun ve 25 yuvarlak meyveli domates çeşidinin şıraya uygunluk durumları İncelenmiştir, önce taze halde bazı özellikleri saptanan domatesler, daha sonra şıraya işlenmiştir. Şıra yapımında, suda çözünür kuru maddesi %4.5’un üzerinde olan meyveler kullanılmıştır. Domates çeşitlerinin şıraya uygunluğunda; şıra verimi, yoğunluk, indirgen şeker ve vitamin C değerleri ölçüt olarak alınmış ve bu nitelikler "tartılı derecelendirme" yöntemine göre değerlen dirilmiştir. Şıraya uygunluk yönünden; uzun meyvelilerden Mecano VF, VF 90-1-2, Nuova Süper Roma, Reproco FR, 70-24; yuvarlak meyvelilerden Yalova-9, Cal (ACE) TM-VF, Campbell 1241, Campbell 17 VF ve Campbell 19 çeşitleri ilk beş sırada yer almışlardır.

A Study on The Suitability of Some Tomato Varieties to Juice Making

Abstract

In this study 47 tomato varieties, 22 with elongated and 25 with round shaped, were investigated in respected their suitability to juice making. The samples were harvested from the yield trials carried out at the Yalova Atatürk Horticultural Research Institute in 1978 and 1979. At first, some quality characteristics of fruits species pH, total acidity and juice yield were determined and then they were processed into tomato juice. The varieties were evaluated based on the juice yield of the tomatoes and the specific gravity, reducing sugars and ascorbic acid content of processed juice of tomatoes. It was concluded that the varieties of Mecano VF, VF 90-1-2, Nuova Super Roma, Pepmeo FR, 70 24 from elongated shaped and Yalova 9, Cal CACE; TM-VF. Campbel 1241, Campbell 17 VT and Campbell 19 from round shaped were found suitable to juice making.
