Bazı Kiraz Çeşitlerinin Dondurulmaya Uygunluğu Üzerinde Bir Araştırma

Abstract

Bu çalışmada 1989-1990 yıllarında, Van, Karagevrek, 0900 Ziraat, Lambert ve Karabodur kiraz çeşitlerinin dondurulmaya uygunluk durumları incelenmiştir. Hasat edilen örneklerde önce pomolojik özellikler saptanmış olup, daha sonra meyveler pilot dondurma ünitelerinde -40℃’de hızlı, ya da -20℃’de dondurucu dolaplarda yavaş dondurulmuştur. Dondurulan kirazlar 9 ay depolanmıştır. Depolamanın 3, 6 ve 9 ayları sonunda çözündürülen örneklerin fiziksel, kimyasal ve doku özellikleri saptanmıştır. Bunlar; pH, toplam asitlik, suda çözünür madde, toplam kuru madde, renk, sızdırma kaybı, hacim azalması ve duyusal özelliklerdir. Hızlı dondurulan meyveler, özelliklerini yavaş dondurulanlardan daha iyi korumuştur. 0900 Ziraat ve Karagevrek çeşitlerinin çözündürülen meyvelerinin doku ve renk kalitelerinin daha iyi olduğu saptanmıştır. Bu çeşitler hızlı dondurmaya diğer çeşitlerden daha uygun bulunurken, Karabodur çeşidinin dondurulmaya uygun olmadığı saptanmıştır.

A Study on the Suitability of Some Cherry Cultivars to Quick Freezing

Abstract

In this study, Van, Karagevrek, 0900 Ziraat, Lambert and Karabodur cherry cultivars were investigated with respect of their suitability for quick freezing. The samples were harvested from the experiment orchard of Yalova Atatürk Central Horticultural Research Institute in 1989 and 1990. First of all, the pomological properties of the fruits harvested were studied and then the fruits were frozen at -40℃ in a pilot quick freezer quickly or at -20℃ slowly. Frozen samples were stored 9 months at -20℃. Physical, chemical and textural properties of the thawed samples were investigated for three times (each on every three months). These are pH, titratable acidity, soluble solids, total solids, color, drip loss, shrinkage, weight loss and sensory properties. The properties of quick-frozen fruit were better than slow frozen. Among the cultivars tested the texture and color qualities oi the thawed cherry samples of 0900 Ziraat and Karagevrek were found better than the others. They were found more suitable to quick frozen than the others although Karabodur cultivar was not suitable for quick freezing.
