Onur ve Kaplan Trabzon Hurması Çeşitlerinin Soğukta Muhafaza Performansı Üzerine Farklı Uygulamaların Etkisi

Abstract

Bu çalışma, soğukta muhafaza edilen 2 farklı Trabzon hurması çeşidinin (Diospyros kaki L., var. Onur ve Kaplan) ağırlık kaybı yüzdesi, renk özellikleri (L*, kroma ve hue açısı), meyve eti sertliği, suda çözünebilir kuru madde (SÇKM), titre edilebilir asitlik (TEA) ve C vitamini içeriği üzerine depolama öncesi ısıl işlem (48°C’de 10 dak.) ve AVG (500 mg.L-¹, 2 dak. batırma işlemi) uygulamalarının etkisini belirlemek amacıyla yürütülmüştür. Kontrol ile karşılaştırıldığında, AVG uygulaması ile her iki çeşitte de ağırlık kaybı azalmıştır. Onur çeşidinin renk özellikleri üzerine uygulamaların ve depolama süresinin herhangi bir etkisi gözlemlenmezken, Kaplan çeşidinde depolama süresinin ilerlemesi ile kabuk renginin tonunda artış tespit edilmiştir. Onur çeşidinde ısıl işlem uygulaması ile et sertliği önemli düzeyde azalmıştır. Depolama süresince, her iki çeşit için SÇKM değerinde artış tespit edilmiştir. Fakat Onur çeşidinde ısıl işlem ve AVG uygulamaları ile SÇKM azalmış, Kaplan çeşidinde ise artmıştır. Titre edilebilir asitlik her iki çeşitte de AVG uygulaması ile azalmış, ısıl işlem ile artmıştır. C vitamini depolama süresince her iki çeşitte de önemli düzeyde azalmış, ancak uygulamaların bu azalış üzerine önemli bir etkisi tespit edilememiştir. Bazı kalite parametreleri için uygulamaların etkisi çeşide bağlı olarak farklılık göstermiştir.

Effects of Different Treatments on Cold Storage Performance of Onur and Kaplan Persimmon Cultivars

Abstract

The present study was conducted to investigate the effects of pre-storage heat treatments (at 48°C for 10 min) and AVG (500 mg.L-¹, 2 min dipping) treatments on percent weight loss, color characteristics (L*, chroma, hue angle), flesh firmness, soluble solids content, titratable acidity and vitamin C content of two different persimmon cultivars (Diospyros kaki L., var. Onur and Kaplan) during the cold storage. Compared to control treatment, AVG treatment decreased the weight loss in both cultivars. While treatments and storage durations did not have any significant effects on color characteristics of Onur cultivar, brightening was observed in color tone of Kaplan cultivar with the progress of storage duration. Heat treatment significantly decreased flesh firmness of Onur cultivar. Increases were observed in soluble solids content of both cultivars throughout the storage. However, heat treatment and AVG treatments decreased soluble solids content of Onur and increased the same parameter of Kaplan cultivar. Titratable acidity decreased with AVG treatment in both cultivars and increased with heat treatment. Vitamin C content significantly decreased in both cultivars throughout the storage but the effects of treatment on such decrease were not found to be significant. With regard to some quality parameters, effects of treatments varied based on the cultivar.
