İki Erik Çeşidinin Farklı Olgunluk Dönemlerinde Hasat Edilen Meyvelerinde Belirlenen Bazı Kalite Özellikleri

Abstract

Deneme, Prunus cerasifera Ehrh. türü içerisinde yer alan ve ekonomik önemi olan Can ve Gül erik çeşitlerine ait meyvelerde yapılmıştır. Çalışmada, farklı olgunluk dönemlerinde hasat edilen meyvelerindeki pomolojik özelliklerin değişimi incelenmiştir. Meyve örnekleri; endokarpın tam olarak sertleşmediği fakat ticari olarak tüketiciler tarafından kabul edilebilir olduğu dönemden (12 Nisan) başlayarak, tam olgunluk periyoduna (30 Mayıs) kadar 12 günlük aralarla 5 farklı olgunluk döneminde alınmıştır. Çalışma sonunda incelenen özellikler açısından Can erik çeşidinin Gül erik çeşidinden daha üstün olduğu belirlenmiştir. Olgunlaşma dönemi ilerledikçe meyvelerde en, boy, ağırlık ve SÇKM miktarının arttığı, asit içeriği ile et sertliğinin azaldığı, çeşit olgunluğunu temsil edecek renk değişimlerinin olduğu gözlenmiştir. Can erik çeşidinin daha parlak olduğu ve başlangıçtaki rengi daha iyi koruduğu belirlenmiştir.

Various Maturation Stages of Two Plum Cultivars on Quality Characteristics

Abstract

In this study, the fruits of Can and Gül plum varieties which are belonging to Prunus cerasifera Ehrh. species and having economic importance were used as a studying material. Pomological characteristics of those varieties were studied during various maturation stages. Fruits were harvested from at the beginning of the soften endocarp stage which acceptable by the consumer (April, 12) until the full harvesting stage (May, 30) 12 days intervals 5 various maturation stages. As a result of this study, Can variety having better characteristics compare to the Gül variety. During the maturation progress fruit width, length, weight and TSS characteristics were increased whereas acidity contents and firmness were decreased and color variation were observed. Can variety be found to be brighter and saved the first color characteristics.
