Pleurotus eryngii Türünün Farklı İzolatlarına Ait Mantarların Protein içeriklerinin Belirlenmesi

Abstract
Bu çalışma tüm dünyada Pleurotus türlerinin kralı olarak bilinen (The King Oyster) Pleurotus eryngii mantarının farklı izolatlarında protein içeriklerinin belirlenebilmesi amacıyla yapılmıştır. Çalışmada Pleurotus eryngii türüne ait farklı lokasyonlardan elde edilen 15 farklı izolat materyal olarak kullanılmıştır. Her bir izolatın protein içeriği sap ve şapkada ayrı ayrı belirlenerek elde edilen sonuçlar bu şekilde değerlendirilmeye alınmıştır. Elde edilen sonuçlara göre ortalama protein içerikleri sap ve şapkada önemli oranda farklılık gösterirken sırasıyla %20.52 ve %32.40 olarak bulunmuştur. Tüm izolatlar ayrı olarak değerlendirildiğinde de hepsinde şapka protein içeriğinin sapa göre daha yüksek olduğu görülmüştür. İzolatların protein içerikleri ise %15.95 ile 40.16 arasında değişirken birbirlerine göre oldukça büyük farklılıklar göstermiştir.

Abstract
This study was conducted to be able to determine the contents of protein in different isolates of the Pleurotus eryngii mushrooms, which is known as the King of the Pleurotus species (The King Oyster). In the study, 15 isolates pertaining to the species Pleurotus eryngii derived at different locations were used as material. The protein contents of every isolate were determined separately in the stem and cap and the results obtained were thus included in evaluation. According to the results obtained, the average protein contents showed significant differences in the stem and cap; they were found to be 14.38% and 22.71%, respectively. When all the isolates were individually evaluated, it was seen that the cap had higher protein contents than the stem in all of them. As for the protein contents of the isolates, they varied between 10.82% and 28.15% and they had significant differences in comparison with one another.
