Çalışmada, Yalova koşullarında adaptasyon denemeleri yürütülen yabancı kökenli 12 karnabahar çeşidinin derin dondurulmaya uygunluk durumları incelenmiştir. 1983 ve 1984 yıllarında hasat edilip laboratuvara getirilen karnabaharların önce fiziksel ve kimyasal kalite özellikleri saptanmıştır. Daha sonra hızlı olarak dondurulan örnekler -20℃’de 6 ay süreyle depolanmışlardır. Depolamanın 3. ve 6. ayları sonunda çözündürülen örneklerde pH, renk, toplam kuru madde, sızdırma kaybı ve hacim azalması ölçümleri yapılmış ve ayrıca duyusal özellikler saptanmıştır. Çeşitli derin dondurulmaya uygunluğunda; sızdırma kaybı, hacim azalması, renk, toplam kuru mad de değerleri ile duyusal özellikler göz önüne alınmıştır. Yapılan değerlendirme sonucu; E.Matra, K.Reuzen, Dominant ve Harvester çeşitleri ilk dört sırada yer almışlardır.
In this study,12 cauliflower varieties that are foreign originated were investigated in respect of their suitability for quick freezing. The samples were harvested from the yield trials carried out at Yalova Atatürk Horticultural Research Institute in 1983 and 1984. First of all, the pomological, some physical and chemical properties of the samples were determined. Then they were stored for 3 and 6 months at -20℃. Physical, chemical and textural properties of the thawed samples were investigated for twice (each on every three months). These are pH, total dry mater, color, drip loss, shrinkage and sensory properties. Freezing process, did not cause any significant changes in the chemical composition of the samples but caused softness in the texture. During storage, the quality of cauliflower samples decreased. Among the cultivars tested, the thawed cauliflower samples of E.Matra, K.Reuzen, Dominant and Harvester were found to maintain texture and color qualities better than the others. It was concluded that the varieties mentioned above were suitable for freezing.
