Çalışmada, Yalova koşullarında yetiştirilen bazı konservelik şeftali çeşitlerinin kompostoya uygunluk durumları incelenmiştir. Önce taze kalite özellikleri saptanan meyveler, daha sonra kompostoya işlenmiş tir. Çeşitlerin kompostoya uygunluğunda; renk, sertlik ve bazı duyusal özellikler yanında taze haldeki suda çözünür madde değerleri ölçüt olarak alınmış ve bu nitelikler "tartılı derecelendirme" yöntemine göre değerlendirilmiştir. Kompostoya uygunluk yönünden Carolyn, Sudanella, Halfort ve Escarolita çeşitleri ilk dört sırada yer almışlardır.
The purpose of this study is to determine the canning qualities of some clingstone peach varieties. The samples were obtained from the experiment orchard of Yalova Atatürk Horticultural Research Institute. In this study the following varieties of clingstone peaches; Escarolita, Vesuvio, Shasta, Vivian, Fortuna, Andros, Klamt, Sudanella, Carolyn, Halford were used. J.H. Hale freestone variety was taken as control. At first, some pomological characteristics of the fresh fruits were evaluated. Then all varieties were canned, Physical, chemical and organoleptic tests were carried out to determine whether fresh fruit characteristics could be correlated with the final product. The quality properties of cling tone varieties were as follows: fruit width 6.5-7.8 cm, fruit length 6.1-7.2 cm, fruit weight 151.7-240.0 gms, stone weight 5.2-7.0 gms, flesh firmness 300-388 gms, pH 3.90-4.10, total acidity as malic acid 0.40-0.51%, soluble solids 12.0-16.0%, soluble solids/acid ratio 25.0-37.2. Because of the small pit cavities, clingstone varieties gave thicker halves that have not flatten during heating. The flesh in the pit cavity was yellow, not red. The suitable varieties, retained their form, size, flavor, color and aroma during pasteurization in the cans were Carolyn, Sudanella, Halfort and Escarolita.
