Makalede, Türkiye'deki zeytinyağı endüstrisinin teknik sorunları ele alınmaktadır. Öncelikle endüstrinin tarihçesi kısaca incelenmekte ve ardından endüstrinin zeytin ağacı sapı aşamasındaki teknik sorunları ele alınmaktadır: yıkama ve temizleme, pazarlama, işleme, yağ ayırma ve yağ depolama.
The article deals with technical problems of the olive oil industry in Turkey. Firstly, the history of the industry is briefly reviewed, and followed by individual technical problems of the industry in the stage of olive strop are, washing and cleaning, marketing, processing, oil separation and oil storage.
