Bazı kalite özellileri yönünden Kinoa Chenopodium quinoa , Karabuğday Fagopyrum esculentum , Ekmeklik Buğday Triticum aestivum ve Siyez Buğdayının Triticum monococcum ana bileşenler analizine göre karşılaştırılması

Abstract

Bu çalışmada ana bileşenler analizi kullanılarak kinoa ve karabuğdayın siyez buğdayı ve ekmeklik buğdayla protein oranı, bin tane ağırlığı, hektolitre ağırlığı, kül ve gluten bant skoru yönünden benzerlik ve farklılıkları; gluten bantları yönünden karşılaştırması yapılmıştır. Çalışmada ekmeklik buğdayda Orta Anadolu Bölgesi’nde kültürü yapılan Bezostaja-1, Müfitbey, Es-26 ve Sönmez-01 çeşitleri, karabuğdayda Aktaş ve Güneş çeşitleri, siyez buğdayı ve kinoa kullanılmıştır. Ana bileşenler analizine gore ekmeklik buğday çeşitleri ile siyez buğdayı benzerlik gösterirken, karabuğday çeşitleri ise kendi içerisinde benzerlik göstermiştir. Kinoa çeşidi ise kendine ayrı bir grubu oluşturmuştur. Sonuç olarak, siyez buğdayı, karabuğday ve Kinoa; protein oranı, bin tane ağırlığı, hektolitre ağırlığı, kül oranı yönünden en az ekmeklik buğdaylar kadar yüksek besleyiciliğe sahip olduğu belirlenmiştir. Karabuğdayın çok zayıf bir gluten oranına sahip olması, kinoada da hiç gluten bulunmaması bu iki çeşidin çölyak hastalarının beslenmesinde kullanılabileceğini göstermektedir

Comparison of some quality characteristics in Kinoa Chenopodium quinoa , Buckwheat Fagopyrum esculentum , Siyez Wheat Triticum monococcum and Bread Wheat Triticum aestivum by principle component analysis

Abstract

The aim of this trial was to assess quality characteristics, such as protein content, ash, test weigh,thousand grain weight and glutenine band scores in cultivars of kinoa, buckwheat and bread wheat. In the study, Bezostaja-1, Müfitbey, Es-26 ve Sönmez-01 bread wheat cultivars, Aktaş ve Güneş buckwheat cultivars, siyez wheat genotype and kinoa cultivar were used. Principal component analysis revealed that bread wheat cultivars drove similar trend, while buckwheat cultivars had similar group. Kinoa cultivar also occupied different group. Results revealed that siyez wheat genotype, kinoa cultivar and buckwheat cultivars has nutritional value as much as bread wheat cultivars. Very low glutenine content in buckwheat and no glutenine content in kinoa make them appropriate materials to use in celiac disease
