Determination and evaluation in terms of healthy nutrition of the pyridoxal, pyridoxine and pyridoxamine forms of vitamin B6 in animal-derived foods

Abstract

In many studies, vitamin B6 is given as the sum of the pyridoxal (PL), pyridoxine (PN) and pyridoxamine (PM) forms. In a limited number of studies, PL, PN and PM forms of vitamin B6 in animal origin foods were reported. Since the bioavailability of PL, PN and PM forms of vitamin B6 are different; knowing the amounts of these forms in foods is important in terms of healthy nutrition. In this study, the PL, PN and PM forms in a total of 38 animal-based foods were determined by high performance liquid chromatography (HPLC). PL and PM were found predominantly in fish, meats and chicken samples. Within these, the highest amount of vitamin B6 were found in golden grey mullet by 616.3 µg/100g, in veal fillet at 376.1 µg/100g and in chicken breast by 329.5 µg /100g, respectively. The PL form in total vitamin B6 ranged in fish between 32.5 and 53.1%, in meats between 15.6 and 48.9%, and in chicken samples between 59.9 and 69.8%. It was also found that milk and milk products contain low amounts of vitamin B6. Based on these results, all animal-based foods were found to be rich in terms of the PL and PM forms. The results of this study will play an important role in the creation of various diets for healthy nutrition.

Hayvansal kaynaklı gıdalardaki Vitamin B6’nın piridoksal, piridoksin ve piridoksamin formlarının belirlenmesi ve sağlıklı beslenmesi açısından değerlendirmesi

Abstract

Birçok çalışmada vitamin B6 pridoksal, pridoksin ve pridoksamin formunun toplamı olarak verilmektedir. Sınırlı sayıdaki çalışmada vitamin B6’nın PL, PN ve PM formu raporlanmıştır. Vitamin B6’nın PL, PN ve PM formlarının biyoyararlanımı farklıdır; Besinlerde bu formların miktarlarının bilinmesi sağlıklı beslenme açısından önemlidir. Bu çalışmada, yüksek performanslı sıvı kromatografisi (HPLC) ile toplam 38 hayvansal kaynaklı gıdadaki vitamin B6’nın PL, PN ve PM formları belirlenmiştir. PL ve PM ağırlıklı olarak balıklarda, etlerde ve tavuk örneklerinde bulmuştur. Balıklarda, etlerde ve tavuk örneklerinde en yüksek miktarda B6 vitamini sırayla kefalde 616.3 µg/100g, dana filetoda 376.1 µg/100g ve tavuk göğsünde 329.5 µg/100g olarak bulundu. Toplam B6 vitaminindeki PL formu balıklarda% 32,5 ile% 53,1, etlerde% 15,6 ile% 48,9 ve tavuk örneklerinde% 59,9 ile% 69,8 arasında değişmiştir. Süt ve süt ürünlerinde düşük miktarda B6 vitamini içerdiği bulunmuştur. Bu sonuçlara bakıldığında, tüm hayvansal gıdaların PL ve PM formları açısından zengin olduğu tespit edilmiştir. Elde ettiğimiz bu sonuçlar sağlıklı beslenme açısından çeşitli diyetlerin oluşturulmasında önemli bir rol oynayacaktır.
