Baharatın, mutfaklarda yer alan önemli bir tatlandırıcı olmakla kalmadığı, yemeklere
lezzet vermenin de ötesinde, yiyenlere şifa da verdiği eskiden beri bilinmektedir.
Baharat ve baharat ticaretinin gündelik yaşamdaki yeri hakkında bir fikir
vermek çabasındaki bu çalışma, baharat ve şifalı otları, ticareti ve ticaretin yapıldığı
Antalya il merkezinde bulunan mekanlar (yani aktarlar) üzerinden inceleme çabasındadır.
Çalışmada, ilk olarak tarihten günümüze kadar baharat ve şifalı otların
kullanımı ve ticaretine ilişkin bilgilere yer verilmektedir. Bunun ardından, bir alan
araştırmasının sonuçlarını içeren günümüzdeki baharat ve şifalı ot ticaretinin yapısı,
baharat ve şifalı otlara olan ilginin sebepleri, satış mekanlarında müşteri kitlesine
bağlı olarak ortaya çıkan farklılaşma (yerel baharatçı ve turistik baharatçı) ele alınmıştır.
Çalışmada, turistik ve yerel baharatçıların birbirlerinden, var olma sebeplerine
bağlı olarak müşteri ve ürün profilleri, mekân düzenlemeleri gibi konularda ayrıldıkları
görülmektedir. Turistik baharatçıların var olma sebebi olarak Antalya’nın
mevcut turizm potansiyeli gösterilebilir. Ürünler de baharat ve hediyelik eşyalardan
oluşmakta olup, mekanlar da bu ürünleri sergilemeye müsait olarak düzenlenmiş-
tir. Öte yandan yerli halka hitap eden yerel baharatçılar, baharatların yerel mutfak
kültüründe önemli bir yere sahip olduğu ülkenin Doğu bölgesinden yaşanan göçün
artması ve bunun yanı sıra özellikle alternatif tıbba ilginin yükselmesi sebepleriyle,
baharat, şifalı ot ve özel bitkisel yağlardan oluşan geniş bir ürün yelpazesi oluşturmuştur.
Spicery is known as being an important ingredient for enhancing flavor in the
cuisines, are also used for healing purposes. This study attempting to examine the
role of spice and spice market in our daily lives approaches the issue by investigating
the spice trade and the places in Antalya city center’s spicery stores (aktar). This
study investigates spicery and herbs in relation to the places where they are traded
in the city center of Antalya. After an introduction of the trade and usage of spices
and herbs throughout history; the structure of contemporary trade, the reasons for
the interest in them, the differentiation within the places in relation to the customers
they aim to sell their products (Local and Touristic Stores) are covered.
Touristic and local spicery stores are differentiated from each other related to
their reason for existence, and with regards to issues like customer profiles, the goods,
their space arrangements and so forth. Touristic spicery stores can be argued in
the tourism potential of Antalya. The goods on sale are mainly spices and souvenirs,
and the space was arranged and designed in an appropriate way to display their
goods. On the other hand the local spicery stores came to display a range of goods
including spice, herbs and special herb-oils, especially with the rise of migration
from the Eastern regions of the country where the spice plays an important role in
the local cuisines, and the rise of the interest in the alternative medicine
