Yanıt yüzey metodu kullanarak mikrodalga ile elma kurutmanın optimizasyonu

Abstract

Bu çalışmada elma dilimlerinin mikrodalga ile kurutulması üzerine mikrodalga çıkış gücü ve dilim kalınlığının etkileri yanıt yüzey metodu (YYM) kullanılarak modifiye edilmiş ev tipi bir mikrodalga fırında incelendi. Deneysel tasarım için dönebilen merkezi kompozit deney tasarım (CCRD) yaklaşımı kullanıldı. Tasarım koşullarında gerçekleştirilen deneylerden etkin difüzyon katsayısı, kuruma hız sabiti, renk değişimi, Hue açısı, toplam kuruma süresi ve enerji tüketimi yanıt değişkenlerinin değerleri belirlendi. Elde edilen ikinci derece polinom denklemlerinin yanıt değişkenlerini temsil etmede başarılı oldukları görüldü. Varyans analizi (ANOVA) sonuçları ve yanıt yüzey eğrilerinden yanıt değişkenleri üzerinde mikrodalga çıkış gücü ve dilim kalınlığının önemli düzeyde etkili oldukları tespit edildi. Bağımsız değişkenlerin yanıtlar üzerindeki etkileri ve anlamlılık düzeyleri istatistiki olarak değerlendirildi ve en az renk değişimi, en kısa kuruma süresi, en az enerji tüketimi ve en yüksek Hue açısı için optimum çalışma şartları belirlendi. Optimum deney koşullarında en fazla % 9.54 hata ile doğrulama deneyleri gerçekleştirildi. Mikrodalga ile elma kurutmada yanıt yüzey metodunun başarılı bir şekilde uygulanabildiği görüldü.
