Abstract

Besin alerjisi, besinlerin bileşenlerine (özellikle proteinler) ve onların sindirim ürünlerine karşı gelişen anormal immünolojik reaksiyonlardır. Bu terim sadece belirtileri immünolojik mekanizmaya göre açıklarken kullanılır. Besin alerjenleri, molekül ağırlıkları 10000-40000 olan glikoproteinler olarak belirlenmiştir. Bu moleküller genellikle proteazlara, ısı ve diğer denatürasyon etkenlere karşı dayanıklıdırlar.

Abstract

Food allergy is caused by abnormal immunological reactions to constituents of food (particularly proteins) or their digestion products. The term should be used only when there is reason to believe that immunological mechanisms are responsible for the symptoms. Food allergens. Where reasonably purified, are often found to be glycoproteins with molecular weights of 10000-40000. These molecules are usually resistant to proteases, heat and denaturants.
