Effect of Post-Harvest Storage and Soaking Treatments on the Yield of Canned Mushrooms (Agaricus bisporus) (Turkish with English Abstract)
Abstract
Methods to reduce shrinkage or increase the yield of mushrooms during canning operations are of economic importance to mushroom processor. Several experiments conducted in this research have demonstrated that post-harvest storage of mushrooms and soaking treatments prior to canning increased the canned product yield compared to mushrooms processed immediately following harvest. The increased yields were attributed to the greater water-holding capacity of the mushrooms that developed during storage.

Abstract
Mantar üreticileri açısından mantarın konserveye işlenmesi sırasında meydana gelen kayıpların azaltılması, verim artışının sağlanması ekonomik önem taşımaktadır. Bu araştırmada hasattan sonra hemen konserveye işlenen mantarlarla, depolama ve suda bekletme işlemlerine tabi tutularak konserveye işlenenler arasındaki verim artışı farkları incelenmiştir. Deneme sonuçları, verim artışının depolama sürecinde ürünün su tutma kapasitesinde meydana gelen artışa bağımlı olduğunu göstermektedir.
