Determination of the Detection Limite of the Method for Determining Nitrite in Meat Products (Turkish with English Abstract)

Abstract

This study was done to determine the detection limit of official method for determining nitrite in meat products. For this aim, calibration graph was prepared and correlation coefficient and errors in the slope and intercept of the regression one were determined furthermore, the suitability of the nitrite level in the 70 sausage samples, analyzed with this method to the legal limits was evaluated. Correlation coefficient was 0.99738 The Standard deviation and the confidence limits for the slope and intercept were 0.007, ±0.025 and 0.0049, ±0.016, respectively. Detection limit of official methods was found as 0.062 µg/mL the suitability of the nitrite level in the sausage samples to the legal limit was 64%.

Et Ürünlerinde Nitrit Tayininde Kullanılan Yöntemin Teşhis Limitinin Belirlenmesi

Abstract

Bu çalışma, et ürünlerinde nitrit derişiminin saptanmasında kullanılan resmi yöntemin (TS 3137) teşhis limitini belirlemek için yapılmıştır. Bu amaçla kalibrasyon grafiği hazırlanmış ve korelasyon katsayısı ve regresyon eğrisinin eğimi ve eğrinin y eksenini kestiği noktadaki hatalar hesaplanmıştır. Ayrıca, bu yöntemle analize alınan 70 adet sosis örneğindeki nitrit derişiminin yasal limitlere uygunluğu değerlendirilmiştir. Korelasyon katsayısı 0.99738 olarak bulunmuştur. Eğim ve eğrinin y eksenini kestiği noktanın standart sapma ve güvenirlik limitleri ise, 0.007, ±0.025 ve 0.0049, ±0.016 olarak belirlenmiştir. Yapılan hesaplama sonucu yöntemin teşhis limiti 0.062 µg/mL olarak bulunmuştur. Analize alınan sosis örneklerinin %64 nün Gıda Kodeksi'ne uygun olduğu belirlenmiştir.
