A research on Determination of L. monocytogenes Pathogen in White Cheese (Turkish with English Abstract)

Abstract

In this study, 82 white cheese samples collected from stores in and around İzmir city were assessed for the presence of L. monocytogenes. Two different enrichment techniques have been used for cold and warm conditions. Listeria colonies îo be isolated were obtained on two different nutritive media. As a result of biochemical and physiological test, 11 of 82 samples (13.4%) were found to be L monocytogenes positive. Better results were obtained by using cold enrichment and Oxford agar as nutritive medium. In all the samples E. aerogenes was dominant with E. coli in a lesser quantity.

Abstract

Bu çalışmada İzmir ili ve çevresindeki büyük satış yerlerinden temin edilen 82 beyaz peynir örneğinde L. monocytogenes aranmıştır. Soğuk ve sıcak koşullarda iki farklı zenginleştirme tekniği uygulanmıştır. İzolasyon için iki değişik besiyerine ekim yapılarak Listeria kolonileri elde edilmiştir. Fizyolojik ve biyokimyasal testler sonucunda 82 beyaz peynirden örneğinden 11'i (%13.4) L monocytogenes açısından pozitif olarak değerlendirilmiştir. Çalışmada soğukta zenginleştirme tekniği ve Oxford agar besiyeri kullanımıyla daha iyi sonuç alınmıştır. Bütün örneklerde E. aerogenes ağırlıklı olmak üzere E.coli 'yede rastlanmıştır.
