Enumeration of Coliforms, Fecal Coliforms and E. coli in Foods (Turkish with English Abstract)

Abstract

In this research, total 1067 samples of pasteurized milk, yogurt, butter, ice cream, cheese, salad, delicatessen products, cookies, spices, fresh fruits and vegetables were enumerated for their contamination of coliform bacteria, fecal coliforms and E. coli. Enumeration was done by using the methods in TS/ISO 6063 and TS/ISO 7725 standards. According to results, the samples contained coliform bac¬teria, fecal coliforms and E. co//respectively in the rates of 58.3%; 44.4%; 20.4% for pasteurized milk (n» 108), 51.9%; 47.1%; 31.4% for yogurt (n» 102), 78.4%; 75.3%; 72.2% for cheese (n-97), 53.8%; 52.7%; 39.6% for butter (n-91), 75.7%, 59.2%; 29.1% for ice-cream (n-103), 100.0%; 91.7%; 78.6% for salad (n=84), 73.7%; 61.0%; 50.9% for delicatessen products (n- 228), 98.8%; 91.7%; 71.4% for cookies (n-84), 80.5%; 77.9; 54.5% for spices (n»77) and 87.1%; 75.3%; 52.7% for fresh fruit and vegetables (n= 93). These results indicate the presence of serious levels of fecal contamination in foods, thus causing a potential hazard for public health.

Çeşitli Gıdalarda Koliform, Fekal Koliform ve E. coli Varlığı

Abstract

Bu çalışmada pastörize süt, yoğurt, peynir, tereyağı, dondurma, salata, şarküteri ürünleri, yaş pasta, baharatlar ve yaş meyve-sebze olmak üzere toplam 1067 gıda örneğinde TS 6063 ve TS 7725'e göre koliform grup bakteri, fekal koliform grup bakteri ve E. coli sayımı yapılmıştır. Analizler sonunda koliform bakteri, fekal koliformlar ve E. coli sırası ile pastörize sütte (n-108) %58.3; %44.4; %20.4, yoğurtta (n-102) %51.9; %47.1; %31.4, peynirde (n-97) %78.4; %75.3; %72.2, tereyağında (n-91) %53.8; %52.7; %39.6, dondurmada (n-103) %75.7; %59.2; %29.1, salatada (n-84) %100.0; %91.7; %78.6, şarküteri ürünlerinde (n= 228) %73.7, %61.0; %50.9, yaş pastada (n-84) %98.8, %91.7; %71.4, baharatlarda (n= 77) %80.5; %77.9; %54.5 ve yaş meyve-sebzede (n=93) %87.1; %75.3; %52.7 düzeyinde pozitif sonuç alın­mıştır. Bu bulgular analiz edilen gıda gruplarında kayda değer ölçüde fekal kontaminasyon ve buna bağlı olarak potansiyel tehlikenin büyük boyutlarda olduğunu göstermektedir.
