The Fatty Acid Composition of Sunflower (Helianthus annuus L.) Oil This research was carried out for the determination of fatty acid compositions of sunflower oil. The oil were obtained from c.v. Ekiz-1 and candidate variety of Ekiz-2 (Production permition). According to the results of the research; the values of myristic acid, palmitic acid, stearic acid, oleic acid, linoleic acid and arachidic acid were found 0%, 7.52%, 5.44%, 41.99%, 44.73% and 0.30% respectively on c.v. Ekiz-1. Also the composition of some fatty acids were found myristic acid 0.025%, palmitic acid, 7.16% stearic acid, 7.48% oleic acid, 43.38% linoleic acid 40.25% and arachidic acid 0.54% on candidate variety of Ekiz-2. Ekiz-2 was synthesis more stable oil than Ekiz-1.
Bu araştırma, Ekiz-1 ayçiçeği çeşidi ile üretim izninde olan Ekiz-2 ayçiçeği çeşit adayının yağ asitleri bileşiminin saptanması amacıyla yapılmıştır. Araştırma sonucuna göre; Ekiz-1’de miristik asit %0, palmitik asit %7.52, stearik asit %5.44, oleik asit %41.99, linoleik asit %44.73, araşidik asit %0.30, Ekiz-2’de ise miristik asit %0.025, palmitik asit %7.16, stearik asit %7.48, oleik asit %43.38, linoleik asit %40.25 ve araşidik asit %0.54 bulunmuştur. Bu sonuçlara göre; Ekiz-2, Ekiz-1’den daha stabil bir yağ sentezlemektedir.
