Fatty Acid Composition of Carcass Regions in Malya Lambs

Abstract

This study was carried out to determine the fatty acid composition and CLA (Conjuge linoleik asid) content ofdifferent carcass regions of Malya male lambs fattened open sheep barn. Lambs begin fattened about 20 kg of live weight The live weight of about 20 kg at the beginning of fattening period, an average of 37.94 kg of live weight of lambs sent to slaughter after 58 days of fattening period. The lambs were fed with ad libitum concentrate feed together with 150 g/head of dehydrated alfalfa per day during fattening period. Daily live weight gain (g) and cold carcass weight (kg) were found as 319 g and 18.59 kg, respectively. The fatty acid composition in the samples taken from pelvic, lower back, brisket and tail regions of carcass were analyzed after slaughter. As a result of analysis, SFA, MUFA, PUFA, Trans and CLA in pelvic region were found as 51.19%, 35.93%, 5.64%, 6.59% and 0.648%, respectively. SFA, MUFA, PUFA, Trans and CLA were found as 41.82%, 43.44%, 9.64%, 4.35% and 0.757% in lower back, 39.52%, 51.40%, 4.45%, 3.67% and 0,960% in brisket region and 45.01%, 41.57%, 5.75%, 6.90% and 0.767% in tail region, respectively.

Malya Kuzularında Karkas Bölgelerinin Yağ Asidi Kompozisyonu

Abstract

Bu çalışma açık ağıl şartlarında besiye alınan Malya erkek kuzuların, karkaslarının farklı bölgelerinde yağ asidi kompozisyonu ve CLA (Conjuge linoleik asid) içeriklerini belirlemek amacıyla yapılmıştır. Yaklaşık 20 kg ağırlıkta 58 gün süreyle besiye alınan kuzular, ortalama 37.94 kg canlı ağırlıkta kesime gönderilmiştir. Kuzuların günlük canlı ağırlık artışları ortalama 319 g, soğuk karkas ağırlıkları 18.59 kg olarak bulunmuştur. Besi süresince kuzulara ad-libitum kesif yeme ek olarak 150 g/baş kuru yonca otu verilmiştir. Kesimden sonra karkasın pelvis, bel, döş ve kuyruk bölgelerinden alınan numunelerde yağ asitleri kompozisyonuna bakılmıştır. Analizler sonucunda pelvis bölgesinde toplam SFA, MUFA, PUFA, Trans ve CLA sırasıyla (%) 51.19, 35.93, 5.64, 6.59 ve 0.648 olarak tespit edilmiştir. Bel, döş ve kuyruk bölgelerinde SFA, MUFA, PUFA, Trans ve CLA sırayla 41.82, 43.44, 9.64, 4.35 ve 0.757; 39.52, 51.40, 4.45, 3.67 ve 0,960; 45.01, 41.57, 5.75, 6.90 ve 0.767 olarak tespit edilmiştir.
