1989 yılında Ondokuz Mayıs Üniversitesi Ziraat Fakültesi Tarım Ürünleri Teknolojisi Bölümünde lisans, 1991 OMU Fen Bilimleri Enstitüsü Gıda Mühendisliği anabilim dalında yüksek lisans, 1998 OMU Fen Bilimleri Enstitüsü Gıda Mühendisliği anabilim dalında doktora eğitimimi tamamladı. 1990-1998 yılları arasında OMÜ Ziraat Fakültesi'nde araştırma görevlisi, 1998-2003 arasında OMÜ Ziraat Fakültesi'nde Dr. Öğretim üyesi, 2003-2012 OMÜ Mühendislik Fakültesi'nde Dr. Öğretim üyesi olarak görev aldı. 2012 yılında ÜAK'dan Doçent ünvanı aldı. 2018 yılında OMÜ Mühendislik Fakültesi Gıda Mühendisliği Bölümü'nde Profesör olarak atanmıştır.

Ali Ali Redha is a researcher specializing in food bioactives—particularly polyphenols, glucosinolates and isothiocyanates—from fruits, vegetables, and agro-industrial by-products. His work focuses on sustainable extraction using green solvents and methodologies, rapid quantification techniques enhanced by machine learning, and the assessment of bioavailability through in vitro digestion models that examine the release and absorption of bioactives. He is also deeply engaged in evaluating their functional properties, including antioxidant and antidiabetic potential.

Mohamed Ghellam, Batna 1 Üniversitesi Gıda Mühendisliği Bölümü'nde Dr.Öğretmen-Araştırmacıdır. Doktora çalışmalarını Türkiye'deki OMU Üniversitesi'nde tamamlamıştır. Şu anda esas olarak şunlar üzerinde çalışmaktadır: - Biyoaktif bileşiklerin (polifenolikler, karotenoidler, ...) ekstraksiyonu ve değerlendirilmesi. - İşleme koşullarının incelenmesi (teknikler, sıcaklık, zaman...). - Ürünlerin kapsüllenmesi, üretimi ve geliştirilmesi (çaylar, kapsülleme, kurutulmuş meyveler...). - Yan ürünlerin ve atıkların değerlendirilmesi.
Dr Juliet Mubaiwa is a dedicated food scientist and lecturer, who brings expertise in teaching food science related and sustainability to drive innovation in the food industry. She hold a higher education certificate in Teaching Learning and Assessment from Atlantic Technological University, Ireland (2025). She also holds a PhD in Food Quality and Design 2018 from Wageningen University, Netherlands. Juliet obtained an MSc in Food Technology from Gent University/ KULeuven, Belgium (2011). Her research career spans from 12 yrs where I worked as a research assistant in food processing at SIRDC research centre in Zimbabwe before embarking on her MSc journey. As a MSc student she worked on lactic acid fermentation to improve bioaccessibility of minerals in plant foods. As postdoctoral researcher at United Arab Emirates University, she worked on utilizing biotransformation in the valorisation of date seed powder, an agrowaste. Current her research is focusing on traditional fermentation and its impact on microbial diversity of products and nutrition, safety and health. Her research interests focus on sustainable biological decontamination technologies, food waste valorization through biotransformation, and the development of natural food additives and nutraceuticals using biotransformation techniques. Her aim to contribute to the achievement of Sustainable Development Goals (SDGs) by promoting healthy eating through the development of functional foods and ingredients, while ensuring food safety, quality, and nutrition.
Mehdi Afshari Bavil was born in Bavil, Tabriz City, Iran, in 1981. He received the BSc degree in solid state physics from Azerbaijan University of Shahid Madani in 2003 and MSc degree in solid state physics from the University of Tabriz in 2006 with high scores. Afterward he received full scholarship from Chinese government to pursue his PhD in optics at Harbin Institute of Technology, Harbin, China.
From 2012 to 2014, he was Postdoctoral Researcher in Silicon Photonics and Microsystem lab at Peking University under supervision of Professor Zhou, working on active plasmonic components. Since 2014, he was a visiting fellowship at Institute of Semiconductors, Chinese Academy of Science. From 2016 to 2019 he was a faculty member as Associate professor at school of instrumentation science and opto-electronics engineering in Beijing Information Science and Technology University. Then He worked as visiting professor at Razi University, Iran and later in Hefei institute of physical science, Chinese Academy of Science. CurrentlyHe is an associate professor in Neijiang normal university, China.
His research interest includes the development of surface plasmon based components particularly passive and active components, integrated plasmonics circuits, optoelectronic devices and silicon photonics.
Mr Afshari is the co-author of a book, more than 20 papers, and more than 10 conference participations. Furthermore He is an active reviewer for many publications such as Optical Society of America, IOP, Springer, and Elsevier. His language ability is also very high, that can speak about 6 languages.
Dr. Mohammad Reza Bagerzadeh Karimi is a structural and earthquake engineering specialist with deep expertise in seismic analysis, structural dynamics, and intelligent infrastructure systems. He integrates advanced computational tools and machine learning to enhance the resilience of buildings and infrastructure. Currently a faculty member at Cyprus International University, he has a strong publication record, industry engagement across Europe and the Middle East, and has developed AI-based tools for structural health monitoring. His work bridges theory and practice in creating safer, smarter structures.
Assoc. Prof. Dr. Elif Fatma Topkara completed her undergraduate, graduate, and doctoral studies at Ondokuz Mayıs University's Department of Biology. She became an Associate Professor in Biology in 2023. Her research interests include ecology, physiology, nanoparticles, and biotechnology.
