Hurmanın Bileşimi ve Antioksidan Özelliği

Öz

Hurma, insanoğlunun üretimini yaptığı en eski tarım ürünlerinden biridir. Bu yüzden insan hayatında oldukça önemli bir yer tutmaktadır. Arap ülkeleri başta olmak üzere birçok ülkede yaygın bir tüketime sahiptir. Hurma meyvesi, olgunlaşma evrelerinde taze veya kuru olarak bulunabilmektedir. Bundan dolayı içerdiği besin ögesi ve antioksidan özelliği farklılık göstermektedir. Hurma, içeriğinde bulundurduğu karoten, flavonoid, prosiyanidin, antosiyanin ve fenolik bileşiklerinden dolayı güçlü bir antioksidandır. İçerdiği bu bileşenler sayesinde insan sağlığına pozitif yönde tesir etmektedir. Ayrıca içerisindeki güçlü lif miktarı ile birlikte de pek çok kronik hastalığın azaltılmasında ve engellenmesinde önemli bir yer tutmaktadır. Bu makalenin amacı, hurma meyvesinin bileşimi ve antioksidan özelliğinin değerlendirilmesidir.
