Comparative Evaluation of Physical, Chemical, and Nutritional Properties and Seed Oil Composition of Some Table Grape (Vitis vinifera L.) Cultivars Grown in Türkiye
Abstract
This study aimed to comparatively evaluate the physical, chemical, and nutritional properties of different table grape (Vitis vinifera L.) cultivars grown in Türkiye. Within this scope, cluster and berry morphological characteristics, ash, protein, and cellulose contents, as well as wax levels in the skin and flesh were determined. In addition, total seed oil content and fatty acid composition, particularly palmitic, stearic, and oleic acids, were analyzed. All analyses were performed using standard analytical methods, and the obtained data were statistically evaluated. The results revealed significant differences among grape cultivars in terms of nutritional composition and seed oil characteristics. Some cultivars exhibited notably high seed oil content and oleic acid levels, indicating their potential for functional food applications and value-added by-product utilization. The findings contribute to the quality characterization of table grape cultivars and provide valuable data for both nutritional assessment and industrial processing.
