Abstract

Bu çalışma da, iki farklı depolama sıcaklığında bekletilen sütlerin elektriksel iletkenliği (Eİ), laktik asit, pH ve toplam bakteri içeriği arasındaki ilişki belirlenmiştir. Yapılan çalışma sonucunda farklı sıcaklıkta depolanan sütlerin laktik asit ve toplam bakteri içeriği artarken pH değeri ise azalmıştır. Aynı zamanda çalışmada, bu parametrelerin Eİ ile arasındaki ilişki de araştırılmıştır. Elektriksel iletkenlik ile pH, Eİ ile laktik asit, Eİ ile toplam bakteri arasındaki ilişki istatistiksel olarak önemli bulunmuştur (P
