Abstract
kuruma hızı incelenmiş ve özgül enerji tüketimi ile kurutulmuş nane yapraklarının renk özellikleri araştırılmıştır. Denemeler 1080 W/m2 infrared radyasyon yoğunluğunda dört farklı hava hızında (0.5, 1.0, 1.5 and 2.0 m/s) gerçekleştirilmiştir. Bütün kuruma koşullarında kuruma süresi 64 -180 dk arasında değişmiştir. Kuruma hızı hava hızının azalmasıyla artış göstermiştir. Özgül enerji tüketimi tüm kuruma koşulları için 37.04 ile 106.58 MJ/kg-buharlaşan su arasında değişmiştir. Kuru nanenin renk özellikleri işlem değişkenlerinden etkilenmiştir
