TÜRKİYE’DE HANEHALKI GIDA HARCAMALARI VE SOSYO EKONOMİK FAKTÖRLER

Abstract

Bu makalede Türkiye İstatistik Kurumu’nun 2003, 2004, 2005 ve 2006 yılları arasında toplam 51,423 haneye uygulandığı Hanehalkı Bütçe ve Tüketim Harcamalarıanketlerinin ham verilerinin analizleri yapılarak Türkiye’de 2003 ve 2006 yılları arasında tahıl ürünleri, sebze-meyve, süt ve süt ürünleri, kırmızı et, beyaz et ve deniz ürünleri olmak üzere 6 farklı temel gıda grubunun 4 yıllık aylık ortalama tüketim oranları ve harcamaları gelir, eğitim, meslek, kır kent ve hane halkı sayısına göre incelenmiştir. İlk önce söz konusu gıda kategorilerinin aylık olarak hangi oranda ve ne sıklıkta tüketildikleri çapraz tablolar olarak sunulmuştur. Çıkan sonuçlara göre 4 yıllık aylık ortalama tüketim oranları %100 ile tahıl ürünleri, sebze-meyve ilk sırada yer almaktadır. %85’lik tüketim oranı ile süt ve süt ürünleri ikinci sırada yer almaktadır. %70 ile beyaz et üçüncü, %50 aylık ortalama ile kırmızı et dördüncü ve %33 ile deniz ürünleri beşinci olmak üzere son sırada yer almaktadır. Türkiye’de gıda tüketim kültürü çok büyük oranda tahıl ürünleri, sebze meyve, süt ürünleri ve beyaz et tercihlerinden oluşmaktadır. Harcama bakımından ise en yüksek miktar aylık ortalama 73 TL ile sebze-meyve grubuna yapılmıştır. Tahıl ürünlerinin tüm Türkiye için aylık ortalama harcama miktarı 52 TL, kırmızı et 41 TL, beyaz et 12 TL, süt ürünleri 9 TL ve deniz ürünleri 6 TL olmak üzere 6 temel gıda grubuna 4 yılda ayda ortalama 196 TL ödenmiştir

SOCIO-DEMOGRAPHIC INFLUENCES ON FOOD PURCHASING AMONG TURKISH HOUSEHOLDS

Abstract

In this article, the analyses of raw data of the Household Budget and Consumption Expenditures surveys, which were applied to a total of 51.423 households by the Turkish Statistical Institute in the years 2003, 2004, 2005 and 2006, were carried out, and four-year monthly average consumption rates and expenditures of six different basic food groups (cereal products, vegetables-fruits, milk and milk products, red meat, white meat and sea products) were investigated in three aspects in terms of income, education, occupation, and urban/rural and household number between the years 2003 and 2006 in Turkey. First of all, to what extent and how frequently the food categories in question are consumed monthly are presented as cross tabulation. According to the results, cereal products and vegetables-fruits rank the first with a 100 % rate of 4-year monthly average consumption rates. Milk and milk products rank the second with a consumption rate of 85 %. White meat ranks the third with 70%, red meat ranks the fifth fourth 50 %, and the sea products rank the fifth with 33 %. Accordingly, a large rate of food consumption culture in Turkey consists of the preferences of cereal products, vegetables-fruits, milk products, and white meat. In terms of expenditures, the highest amount is in vegetable-fruit group with a monthly average of 73 TL. Monthly average expenditure amount of cereal products is 52 TL for all around Turkey. This amount for red meat, white meat, milk and sea products is 41 TL, 12 TL, 9 TL and 6 TL, respectively. The four-year monthly average expenditure is 193 TL
