Abstract

In recent years, the societies became more conscious about the nutrition. Healthy and reliable food is the main demand, however, request to functional foods which can be briefly defined as beneficial nutrients to human health increases. Kefir is an important member of the probiotics, which are the subgroup of functional foods. It is a fermented milk product and contains useful bacteria and yeasts. In this text, the health and metabolism effects of the kefir are discussed in the light of current literature
