Ethno-Cultural Meaning of The Term Traditional Food Karachay and Balkar

Abstract

Language is a storehouse of history of the people - its carrier and vocabulary directly responds to changes in the lives of the people. Dairy products have traditionally occupied the main place in the diet of Balkar and Karachay, and therefore, the terms representing the value of dairy foods make up a certain part of the vocabulary. The main type of dairy food for the Karachai and Balkars always considered ayran having such species as gypy ayran "drink prepared on fungi (yogurt)" zhuuurt "sour whole milk, varenets" mystyndau "sour milk obtained fermented pre-heated, but not boiled milk ", gybyt ayran" burdyuchny ayran (a wineskin filled in and has acquired a special flavor)." The meat - traditional kitchen products Balkar and Karachay. The antiquity of the use of mutton shows a complex and ancient tradition of separation of certain portions of the carcass. Names of dairy and meat products belong to the stratum of vocabulary, which has ethnic and cultural importance, as evidenced by the fact that many of them are commonly used as part of phraseology, proverbs, etc. will Identification and description of them is important, especially for native minority languages.
