Evaluation Of Microbiological Indicators For Haccp Cattle Slaughterhouse Line In A Business Operator

Abstract

In this study, microbiological indicators for HACCP slaughterhouse line in a first class business operator were evaluated. A total of 60 carcasses from slaughterhouse production line were determined for total aerobic mezophilic bacteria (TAMB) and numbers of fecal coliform bacteria. Hands of employee form the slaughterhouse, equipments and machinery were also scanned for the presence and contamination levels of staphylococcus/micrococcus and fecal coliform bacteria using swabs. The average TAMB counts were log10 3,58 cfu/cm2, whereas the average number of fecal coliform bacteria was log103.30 cfu/cm2 in total 60 carcasses examined. About 68,3% of carcasses were contaminated with fecal coliform microorganisms. The average number of staphylococcus/micrococcus and fecal coliform bacteria counts were log102, 87 cfu/cm2 and log102, 36 cfu/cm2, respectively in the hands of employee. The bacteria numbers of slaughterhouse equipment and employee coats were log102,47 cfu/cm2 and log103,20 cfu/cm2, respectively, whereas numbers of fecal coliform bacteria were log101,94 cfu/cm2 and log102,70 cfu/cm2 , respectively.
