Üniversite Yurt Yemekhanelerinde Tabak İsrafı: Psikolojik Bir İnceleme

Abstract

Gıda israfı küresel ölçekte çevresel, ekonomik ve toplumsal sorunlara yol açan ciddi bir problemdir. Gıda israfının önemli bir kısmını oluşturan tabak israfı, tabakta bırakılan yenilebilir yiyecekleri tanımlamak için kullanılmaktadır. Bu çalışmanın amacı, yurt yemekhanelerinden faydalanan üniversite öğrencilerinin tabak israfı davranışlarını, bu davranışa ilişkin duygu ve düşüncelerini ve israfa yönelik farkındalık düzeylerini sosyal bilişsel kuram çerçevesinde incelemektir. Araştırma, nitel betimsel araştırma deseni kullanılarak yürütülmüştür. Çalışma kapsamında 14 üniversite öğrencisiyle yarı yapılandırılmış görüşmeler gerçekleştirilmiştir. Elde edilen veriler, tümdengelim ve tümevarım yaklaşımlarının bir arada kullanıldığı hibrit içerik analizi yöntemiyle çözümlenmiştir. Analiz sonucunda sekiz kategori (yemek hizmeti algısı, beslenme bilinci, tabak israfı deneyimi, tüketim ortamı, sosyal etki, duygular, tutum ve değerler, israf farkındalığı) ve yedi alt kategori (sunum, hijyen, porsiyon, lezzet, servis, aile, din) belirlenmiştir. Ortaya çıkan kategori ve alt kategoriler, kuramsal çerçeveyi oluşturan birey, çevre ve davranış boyutları esas alınarak sınıflandırılmıştır. Öğrencilerin büyük çoğunluğunun gıda israfını uygun olmayan bir davranış olarak değerlendirdiklerini ve bu nedenle pişmanlık ile üzüntü hissettiklerini belirtmelerine rağmen, sıklıkla tabak israfı yaptıkları görülmüştür. Ayrıca öğrencilerin yurt yemeklerine yönelik olumsuz algılara sahip oldukları, sağlıklı ve dengeli beslenme konusunda bilgi eksiklikleri bulunduğu ve gıda israfına ilişkin farkındalıklarının yetersiz olduğu belirlenmiştir. Yurt yemekhanelerinde tabak israfına yönelik herhangi bir yaptırımın bulunmaması, bu davranışın zamanla normalleşmesine ve kabul edilebilir bir uygulama olarak algılanmasına katkıda bulunmuştur. Elde edilen bulgular, bireysel, davranışsal ve çevresel etmenlerin karşılıklı etkileşimini vurgulayan sosyal bilişsel kuram çerçevesinde tartışılmıştır.

Plate Waste in University Dormitory Dining Halls: A Psychological Analysis

Abstract

Food waste is a major global issue with environmental, economic, and social impacts. Plate waste, a key part of food waste, refers to edible food left uneaten on plates. This study aims to explore the plate waste behaviors of university students using dormitory dining halls, their related thoughts and feelings, and their awareness of food waste within the framework of social cognitive theory. The research used a qualitative descriptive research design. Semi-structured interviews were conducted with 14 university students. The data obtained were analyzed through a hybrid content analysis method combining deductive and inductive approaches. Eight categories (perception of food service, nutritional awareness, plate waste experience, consumption setting, social influence, emotions, attitudes and values, waste awareness), and seven subcategories (presentation, hygiene, portion, taste, service, family, religion) were identified. The resulting categories and subcategories were classified under the individual, environment, and behavior components of the theoretical framework. Although the majority of students considered food waste to be an inappropriate behavior and reported feelings of regret and sadness when engaging in it, they were nevertheless found to frequently waste food on their plates. In addition, students were found to hold negative perceptions of dormitory meals, possess insufficient knowledge regarding healthy and balanced nutrition, and demonstrate limited awareness of food waste. The absence of any sanctions against plate waste in dormitory dining halls appears to have contributed to the normalization of this behavior over time, leading it to be perceived as an acceptable practice. The findings were discussed within the framework of social cognitive theory, which emphasizes the reciprocal interaction among personal, behavioral, and environmental factors.
