Elma dünya genelinde en çok tüketilen ve en çok ticareti yapılan yumuşak çekirdekli meyvelerden biri olup, taze olarak tüketilebildiği gibi elma suyu, reçel-marmelat, şarap ve sirke gibi çok çeşitli ürünlere işlenmekte ve genellikle besin içeriği bakımından zengin olan elmanın kabukları, posa ve çekirdekleri atık olarak kalmaktadır. Bu gibi tarımsal atıkların katma değeri yüksek ürünlere dönüştürülmesi, çevre sorunlarının azaltılması yanında ekonomik faydalar da sağlamaktadır. Bu çalışmada yavaş yöntem ile farklı çeşitlerde atık elma kabukları ve çekirdek evlerinin sirke üretiminde kullanılabilirliğini araştırılmıştır. Etil alkol fermantasyonu ile briks değerleri hızlı bir şekilde düşmüş ve esas ürün olarak etil alkol oluşmuş ve ardından gerçekleşen asetik asit fermantasyonu ile etil alkol %0.5'in altına düşmüştür. Ayrıca, elde edilen sirkelerde pH değerleri 3.25-3.41, toplam asitlik 15.3-23.07 g/L, antioksidan aktivite 68.3-90 µl ve toplam fenolik madde 259.8-387.1 mg GAE/L arasında belirlenmiştir. Bu çalışmada ülkemizde ilk defa elma atıkları sirke üretiminde değerlendirilmiştir. Özellikle temizlik amaçlı sirke üretimi, elma atıklarına katma değer kazandırılmasında alternatif olarak kabul edilebilir görünmektedir

Apple is one of the most consumed and traded soft-core fruits worldwide. Apples can be consumed fresh and also processed into a wide variety of products such as apple juice, jam-marmalade, wine and vinegar. Generally the apple peels and pulp which are rich in nutrient content and the apple cores remain as waste. The conversion of such agricultural wastes into high value-added products provides economic benefits as well as reduction in environmental problems. In this study, the usability of different types of waste apple peels and apple core with seeds in vinegar production was investigated with slow method. The brix values decreased rapidly due to the ethyl alcohol fermentation and the concentration of ethyl alcohol which was formed as the main product, got decreased below 0.5% after subsequent acetic acid fermentation. In addition, the values of pH, total acidity (as acetic acid), antioxidant activity and total phenolic substance in the vinegars obtained were determined between 3.25-3.41, 15.3-23.07 g/L, 68.3-90 µl and 259.8-387.1 mg GAE/L, respectively. In this study, apple wastes have been utilized in vinegar production for the first time in our country. Especially the production of vinegar for cleaning purposes seems like an acceptable alternative for value addition to apple wastes.
