DETERMINING THE FOOD SAFETY KNOWLEDGE LEVEL OF THE KITCHEN STAFF WORKING FOR 4 AND 5 STAR HOTEL KITCHENS

Abstract

This study is planned and conducted with the aim of determining the food safety knowledge level of the kitchen staff working for 4 and 5 star hotel kitchens. In the study 377 kitchen staff from 6 four-star and 13 five-star totally 19 hotels in Antalya, Trabzon, Çanakkale, Gaziantep and Çeşme in Izmir province were surveyed. Chi square test was applied to check whether there is a relation between answers given to the questions about food safety and star numbers of the hotels. One way ANOVA was applied to determine the average of the scores of achievement test among mentioned groups. Finally to compare the average of achievement test scores with respect to the star numbers of the hotels, t-test was used

DÖRT VE BEŞ YILDIZLI OTEL MUTFAKLARINDA ÇALIŞAN MUTFAK PERSONELİNİN GIDA GÜVENLİĞİ KONUSUNDA BİLGİ DÜZEYLERİNİN SAPTANMASI

Abstract

Araştırma Dört ve beş yıldızlı otel mutfaklarında çalışan mutfak personelinin gıda güvenliği konusunda bilgi düzeylerinin saptanmak amacıyla planlanıp yürütülmüştür. Araştırma Antalya, Trabzon, Çanakkale, Gaziantep ve İzmir İli Çeşme İlçesinde bulunan 6 dört yıldızlı, 13 beş yıldızlı olmak üzere toplam 19 otelde, 377 mutfak personeline anket uygulanmıştır. Çalışanların gıda güvenliği ile ilgili sorulara verilen cevaplarla otellerin yıldız sayısı arasında bir ilişki olup olmadığını test etmek amacıyla Ki-Kare(ChiSquare) başarı testinden aldıkları puanların ortalamasını saptamak için One-Way Anova analiz yöntemi uygulanmıştır. Otellerin yıldız sayısına göre başarı testinden almış oldukları puanların ortalamasını karşılaştırmak için t testi uygulanmıştır
