ALTERNATİF YAĞ BİTKİSİ: KETENCİK [Camelina sativa (L.) Crantz]

Abstract

Ketencik Brassicaceae familyasında yer alan, eski bir kültür bitkisi olup, Türkiye’de marjinal alanlarını değerlendirebilecek alternatif bir yağ bitkisidir. Ketenciğin yağ elde etmek amacıyla tarih öncesinden beri kültürü yapılmıştır. Fakat ketencik üretimi zamanla yavaş yavaş azalmış ve günümüzde geniş alanlarda yetiştirilmemektedir. Bununla birlikte, düşük çevre isteği ve ürünlerinin yaygın olarak kullanılabilirliği sayesinde bitki büyük ilgi görmüştür. Ketencik yağının özel kompozisyonu çok cazip gözükmektedir. Ketencik yağının doymamış yağ asitleri oranı soya, ayçiçeği ve kolza yağı gibi yaygın olarak kullanılan bitkisel yağların doymamış yağ asitlerinin oranından fazladır. Ayrıca, ketencik yağı tipki keten yağı (% 50-55 α-linolenik asit ihtiva eden) gibi yüksek oranda çoklu doymamış yağ asitlerine sahiptir. Özel yağ asitleri kompozisyonundan dolayı ketencik, yakın zamanda, yaygın olarak bilinen ve önemli bir bitkisel yağ kaynağı haline gelecektir.

Abstract

Ketencik Brassicaceae familyasında yer alan, eski bir kültür bitkisi olup, Türkiye’de marjinal alanlarını değerlendirebilecek alternatif bir yağ bitkisidir. Ketenciğin yağ elde etmek amacıyla tarih öncesinden beri kültürü yapılmıştır. Fakat ketencik üretimi zamanla yavaş yavaş azalmış ve günümüzde geniş alanlarda yetiştirilmemektedir. Bununla birlikte, düşük çevre isteği ve ürünlerinin yaygın olarak kullanılabilirliği sayesinde bitki büyük ilgi görmüştür. Ketencik yağının özel kompozisyonu çok cazip gözükmektedir. Ketencik yağının doymamış yağ asitleri oranı soya, ayçiçeği ve kolza yağı gibi yaygın olarak kullanılan bitkisel yağların doymamış yağ asitlerinin oranından fazladır. Ayrıca, ketencik yağı tipki keten yağı (% 50-55 α-linolenik asit ihtiva eden) gibi yüksek oranda çoklu doymamış yağ asitlerine sahiptir. Özel yağ asitleri kompozisyonundan dolayı ketencik, yakın zamanda, yaygın olarak bilinen ve önemli bir bitkisel yağ kaynağı haline gelecektir
