Investigation of Drying Kinetic of Hacıhaliloglu Type Apricots Grown in Malatya City

Abstract

In this study, drying kinetics of Hacıhaliloğlu type apricots which are grown in Malatya region were determined. In trials, air temperatures were taken as 70, 75, 80 0C and air velocities were taken as 1.0, 2.0, 3.0 m/s. Some of apricot samples were dried after sulfuring. According to the analysis of Ficks’ Second Rule, diffusion coefficient was calculated for each air tempera-ture and velocity. According to the results, with the increasing of temperature, was determined to increase both drying velocity and effective diffusion coefficient.Values of effective diffusion coefficient of samples were found as 4,952x10-10 ... 1,362x10-9 and 3,549x10-10 ...7,180x10-10 m2/s, in sulfured apricots and non- sulfured apricots, respectively.
