Explain of Drying Process By Various Models in Eggplant Drying

Abstract

In this study, a laboratory dryer is used for eggplant drying process and moisture content at any drying time were compared by Newton, Page, Modified Page, Henderson and Pabis, Logaritmic, two-term, two-term exponential, Wang and Singh, Thompson, difusion approximation, Modified Henderson and Pabis, Verma et al., Midilli et al. models. The effect of drying air temperature and velocity on the coefficients of the best suited model were determined by multiple regression method. Root mean square error (RMSE) and khi squre (X2) were used for the determination of the best suitable drying model. Modelling efficiency (EF) was determined. According to the results, The effects of drying air tem-perature (T) and velocity (V), could be predicted by the Midilli et al. (MR=a.exp(-k.t)+b.+t)) with contants and coeffi-cients a=[0.7889+0.050.ln(T)], k={(11.0023+3.1720.ln(T)}, n=[1.0204.exp(1.0580/T)], b=0.0005.exp(0.0877/V) for 6 mm and a=[0.9853+0.0264.ln(T)], k=-(0.7517+0.2964.ln(T)), n=[0.6899.exp(0.3403/T)] b=0.0025.exp(0.1738/V) for 9 mm. Modeling efficiency (EF) changed between 0,998300…0,999123 for 6 mm and changed between 0,998684….0,999188 for 9 mm.

Patlıcan Kurutmada Kurumanın Çeşitli Modellerle Açıklanması

Abstract

Bu çalışmada, bir laboratuar kurutucusunda patlıcanın kuruma süresinin belirli bir anındaki nem içeriğini belirle-mek amacıyla Newton, Page, Geliştirilmiş Page, Henderson ve Papis, logaritmik, iki terimli, iki terimli ve eksponansiyel, Wang ve Sing, Thompson, difüzyon yaklaşımı, geliştirilmiş Henderson ve Papis, Verma ve ark. ve Midilli ve ark. model-leri birbirleri ile karşılaştırılmıştır. Kuruma olayını en iyi açıklayan modelde bulunan katsayılara, kurutma havası sıcak-lığı ve hızındaki değişimin etkileri çoklu regresyon yöntemiyle incelenmiştir. Tahminin standart hatası (RMSE) ve khi-kare (X2) değerleri kullanılarak en uygun model saptanmış ve bunlara ilaveten modelin modelleme yeterliliği de (EF) belirlenmiştir. Elde edilen sonuçlara göre; kuruma havası sıcaklığının (T) ve hızının (V) etkileri 6 mm dilim kalınlığında-ki patlıcan örnekleri için; a=[0.7889+0.050.ln(T)], k={(11.0023+3.1720.ln(T)}, n=[1.0204.exp(1.0580/T)], b=0.0005.exp(0.0877/V); 9 mm dilim kalınlığı için a=[0.9853+0.0264.ln(T)], k=-(0.7517+0.2964.ln(T)), n=[0.6899.exp(0.3403/T),] b=0.0025.exp(0.1738/V) sabit ve katsayıları ile nem değişimini en uygun biçimde açıklayan Midilli ve ark. (ANO=a.exp(-k.tn)+b.t)) modeli ile tahmin edilmiştir. Modelleme yeterliliği de 6 mm için 0,998300…0,999123 arasında; 9 mm için 0,998684….0,999188 arasında değişmiştir.
