Abstract

Çanakkale şeftali ve nektarin üretiminde ülkemizin en önemli merkezleri arasında yer almaktadır. Üretilen meyvelerin yüksek kalite
özelliklerine sahip olması hem iç hem de dış pazarlarda büyük avantajlar sağlamaktadır. Şeftali ve nektarinlerin meyve kalitesini en fazla
etkileyen özelliklerden biri de aroma profilidir. Meyvelerin sahip olduğu aroma, çok sayıda uçucu bileşiğin farklı konsantrasyonlarda bir araya
gelmesinden oluşmaktadır. C6 bileşikleri, esterler, aldehitler, alkoller, ketonlar, laktonlar, terpenoidler ve diğer kimyasal bileşikler gibi
maddelerden oluşan aroma, meyvelerin duyusal özelliklerini belirleyen önemli bir kalite ölçütüdür. 2011 yılında yürütülen bu çalışmada,
Çanakkale’de yoğun olarak yetiştirilen Cresthaven, Glohaven, J. H. Hale, Redhaven ve Washington şeftali çeşitleri ile Caldesi 2000 ve
Fantasia nektarin çeşitlerinin taze meyve örneklerinde aroma profilleri incelenmiştir. Aromatik maddeler dietil eter çözgeni kullanarak sıvı-sıvı
ekstraksiyon yöntemi ile elde edilmiştir. Aromatik bileşiklerin tanımlanması ise Gaz Kromatografisi / Kütle Spektrometresi (GC/MS) cihazı ile
yapılmıştır

Investigation of Aromatic Compounds of Peach and Nectarine Varieties Grown in Canakkale Ecological Conditions

Abstract

Çanakkale is one of the main peach-nectarine producing centers of Turkey. The region has great advantages both internal and external markets due to produced high quality fresh fruits. One of the most important criteria of fruit quality of peaches and nectarines is aroma. The chemical formation of aroma is very complex process. Aroma is formation and combination of various volatile constituents at different concentrations at different fruit growth and maturity stages. The volatiles of peaches and nectarines include C6 compounds, alcohols, aldehydes, esters, terpenoids, ketones, lactones and other compounds which affect the sensorial quality of fruits. This study was performed in 2011 season. In this experiment, aromatic compounds of 5 peach varieties (Cresthaven, Glohaven, J. H. Hale, Redhaven and Washington) and 2 nectarine varieties (Caldesi 2000 and Fantasia) were prepared by using diethyl ether solvent for liquid-liquid extractions. The identification of aromatic constituents was performed by Gas Chromatography / Mass Spectrometer (GC/MS) instrument. The numbers and relative ratios of fruit volatiles including C6 compounds, esters, aldehydes, lactones, terpenoids, alcohols, ketones and other compounds were determined
