Abstract

Enzimler, endüstriyel işlemlerde istenilen reaksiyonların katalizlenmesinde kullanılırlar. Söz konusu işlemlerdeki enzim uygulamaları, günümüzde ihtiyaç duyulan enzimlerin az bulunur olmaları ve yüksek maliyetleri nedeniyle güçleşmektedir. Bu problemin üstesinden gelinebilmesi amacıyla mikrobiyel enzimler kullanılmaktadır. Proteaz, lipaz, katalaz, lâktaz, transglutaminaz gibi enzimler süt ve ürünlerinin üretiminde veya kalitelerinin arttırılmasında kullanılan başlıca mikrobiyel kaynaklı enzimlerdir. Mikrobiyel enzim kullanımı dünyada gıda endüstrilerinde yeni fiziksel ve fonksiyonel özellikli süt ve süt ürünlerinin geliştirilmesi yönünden de önem taşımaktadır. Bu makalede mikrobiyel enzimlerin peynir ve diğer süt ürünlerinde kullanımı ve öneminden bahsedilmiştir

The use of microbial enzyme in dairy industry

Abstract

Enzymes are used to catalyse the desirable reactions in industrial processes. Today, enzyme applications in such processing gets more difficulties because of the rare occurance and high costs. The aim of using the microbial enzymes is to achieve this problem. Such enzymes like proteases, lipases, catalase, lactases and transglutaminase in milk and milk products in production and improving their quality are used as primary microbial origin enzymes. At the same time, the usage of microbial enzymes are important for the development of milk and milk products with new physical and functional properties in world food industry. In this article the usage and importance of microbial enzymes in cheese and other milk products were mentioned
