Etlik Piliç Yetiştiriciliğinde Çevresel Koşulların ve Beslemenin Karkas Kalitesi Üzerine Etkileri

Abstract

Son yirmi yılda kanatlı eti üretimi dünyada ve Türkiye’de çok önemli gelişme göstermiştir. Özellikle son yıllarda tüketicilerin daha kaliteli gıda tüketme isteklerinin artış göstermesiyle, karkas kalitesi önemli bir kriter haline gelmiştir. Bu açıdan, piliç eti üretiminde karkas kusurlarının oluşumunu etkileyen faktörlerin bilinmesi üretimde maksimum karlılığın sağlanması noktasında önem arz etmektedir. Diğer yandan, giderek yaygınlaşan hayvan refahı kavramına yönelik direktifler yetiştirme uygulamalarında buna bağlı değişikliklerin ortaya çıkmasını zorunlu kılmıştır. Etlik piliçlerde refah kavramı çerçevesinde yetiştirme dönemi, kesim öncesi aşamalar (yükleme, sevkiyat, asma, bayıltma gibi) ve kesim esnasında uygulanan işlemler olmak üzere üç farklı dönem ele alınmaktadır. Böylece, hem hayvan refahı iyileştirilmekte, hem de son ürün olan piliç etinin kalitesi korunmaktadır. Bu süreçlerin içerisinde uzun bir süreyi kapsayan yetiştirme döneminde etlik piliçlere sağlanan barındırma yoğunluğu, altlık kalitesi, sıcaklık ve nem gibi kümes içi koşullar ve besleme karkas kalitesinde belirleyici rol oynamaktadır. Bu derlemede, etlik piliçlerde yetiştirme döneminde uygulanması gereken çevresel koşullar ve besleme ile ilgili genel noktalar ve bunların karkas kalitesi üzerine olası etkileri hakkında bilgi verilmiştir
