Türkiye’de hanehalkı gıda tüketim davranışlarının ev içi ve ev dışı gıda talebi bağlamında analizi

Abstract

Gelişmekte olan ülkelerde ekonomik büyüme, tüketim alışkanlıklarını dönüştürmekte ve bu dönüşüm özellikle gıda tüketim kalıplarında belirgin bir şekilde hissedilmektedir. Bu bağlamda, geleneksel ev içi gıda tüketiminden ev dışı tüketime doğru bir kayma dikkate değer bir eğilim olarak ortaya çıkmıştır. Türkiye’de ev dışı gıda tüketiminin toplam gıda harcamaları içindeki payı istikrarlı bir şekilde artarken, hane halkı gelirlerindeki yükselişe paralel olarak gıda harcamalarının toplam tüketim içindeki payı azalmaktadır. Bu çalışmanın amacı, Türkiye’de hane halkı gıda tüketim harcamalarını ev içi ve ev dışı tüketim bağlamında karşılaştırmalı olarak analiz etmektir. Temel veri kaynağını, Türkiye İstatistik Kurumu tarafından 2023 yılında yürütülen Hane halkı Bütçe Anketi oluşturmaktadır. Anket, her ay 891 hane ile gerçekleştirilmiş olup, yıllık bazda toplam 10.688 haneyi kapsamaktadır ve Türkiye genelinde gelir ve harcama dinamiklerini temsil edici nitelikte kapsamlı veriler sunmaktadır. Ampirik analizde, gıda talep parametrelerini tahmin etmek için Working-Leser talep modeli; ev dışı gıda harcamaları için ise Heckman iki aşamalı talep modeli uygulanmıştır. Bu modeller aracılığıyla gelir değişimlerinin gıda tüketim kalıpları üzerindeki etkisi ölçülmüş; ayrıca hane halklarının sosyodemografik ve ekonomik özellikleri, gelir gruplarına göre tüketim tercihleri ve ev dışı gıda harcamalarının belirleyicileri incelenmiştir. Sonuçlar, sosyoekonomik koşullardaki iyileşmelerin ve yaşam tarzlarındaki dönüşümlerin, Türkiye’de hane halkı gıda tüketim tercihlerinde ev dışı tüketime yönelik bir kaymaya yol açtığını ortaya koymaktadır. Bu bağlamda, düşük gelirli grupların beslenme ve gıda güvenliği açısından desteklenmesi gerektiği; ev dışı gıda tüketiminde ise kalite, sağlık ve sürdürülebilirlik kriterlerinin önceliklendirilmesi gerektiği vurgulanmaktadır.

Analysis of household food consumption behavior in Türkiye in the context of at-home and out-of-home food demand

Abstract

In developing countries, economic growth is transforming consumption habits, and this transformation is particularly evident in food consumption patterns. In this context, the shift from traditional at-home food consumption toward out-of-home consumption has emerged as a noteworthy trend. Out-of-home food consumption in Türkiye has been steadily increasing its share within total food expenditures; in contrast, the share of food expenditures in overall consumption has declined in parallel with rising household income. The objective of this study is to comparatively analyze household food consumption expenditures in Türkiye in the context of at-home and out-of-home consumption. The primary data source is the Household Budget Survey conducted by the Turkish Statistical Institute in 2023. The survey was carried out with 891 households each month, resulting in a total of 10.688 households on an annual basis, providing representative data that comprehensively reflect income and expenditure dynamics across Türkiye. In the empirical analysis, food-at-home demand was estimated using the Working–Leser model, whereas food-away-from-home expenditure was modeled through a Heckman two-stage framework. Through this model, the impact of income changes on food consumption patterns was measured; additionally, households’ sociodemographic and economic characteristics, consumption preferences by income group, and determinants of out-of-home food expenditures. The results reveal that improvements in socioeconomic conditions and transformations in lifestyles have triggered a shift in household food consumption preferences in favor of out-of-home consumption in Türkiye. In this regard, it is emphasized that low-income groups should be supported in terms of nutrition and food security, while quality, health, and sustainability criteria should be prioritized in out-of-home food consumption.
