Analysis of household food consumption behavior in Türkiye in the context of at-home and out-of-home food demand

Abstract

In developing countries, economic growth is transforming consumption habits, and this transformation is particularly evident in food consumption patterns. In this context, the shift from traditional at-home food consumption toward out-of-home consumption has emerged as a noteworthy trend. Out-of-home food consumption in Türkiye has been steadily increasing its share within total food expenditures; in contrast, the share of food expenditures in overall consumption has declined in parallel with rising household income. The objective of this study is to comparatively analyze household food consumption expenditures in Türkiye in the context of at-home and out-of-home consumption. The primary data source is the Household Budget Survey conducted by the Turkish Statistical Institute in 2023. The survey was carried out with 891 households each month, resulting in a total of 10.688 households on an annual basis, providing representative data that comprehensively reflect income and expenditure dynamics across Türkiye. In the empirical analysis, food-at-home demand was estimated using the Working–Leser model, whereas food-away-from-home expenditure was modeled through a Heckman two-stage framework. Through this model, the impact of income changes on food consumption patterns was measured; additionally, households’ sociodemographic and economic characteristics, consumption preferences by income group, and determinants of out-of-home food expenditures. The results reveal that improvements in socioeconomic conditions and transformations in lifestyles have triggered a shift in household food consumption preferences in favor of out-of-home consumption in Türkiye. In this regard, it is emphasized that low-income groups should be supported in terms of nutrition and food security, while quality, health, and sustainability criteria should be prioritized in out-of-home food consumption.
