Factors Effecting Equilibrium Modified Atmosphere Packaging of Fruit and Vegetables

Abstract

Equilibrium modified atmosphere packaging EMAP is a new technique used to extend the shelf life of fresh fruits and vegetables. EMAP can be defined as a modification of the atmosphere inside package achieved by respiration of product and transfer of the gases through the packaging. Manipulating the amount of oxygen O2 , carbon dioxide CO2 and moisture within the packaging at the appropriate storage temperature, the modified atmospheric packaging enables the produce to live longer by delaying respiration, ripening and ethylene production. For favorable EMAP, intrinsic properties of fresh fruit and vegetables, film permeabilities and optimal package design should be known. In this review, factors effecting equilibrium modified atmosphere packaging of fruit and vegetables have been reviewed

Abstract

Denge modifiye atmosfer ambalajlama DMAA teknolojisi özellikle taze meyve ve sebze gibi solunum yapan ürünlerin raf ömürlerinin artırılmasında uygulanan yeni bir ambalajlama tekniğidir. DMAA ambalaj içindeki atmosferin, ürünün solunumu ve gazların ambalaj boyunca transferi ile modifiye edilmesi olarak tanımlanabilmektedir. DMAA uygun depolama sıcaklığında, ambalaj içindeki oksijen O2 , karbondioksit CO2 ve nemin doğru ayarlanmasıyla, solunum, olgunlaşma ve etilen C2H4 üretiminin yavaşlatılmasını sağlayarak ürünün daha uzun depolanmasına olanak sağlar. Ambalaj içinde iyi bir denge modifiye atmosfer DMA oluşturmak için, taze meyve ve sebzelerin özelliklerinin, film geçirgenliğinin ve optimum ambalaj tasarımının iyi bilinmesi gerekmektedir. Bu derlemede, meyve ve sebzelerde denge modifiye atmosfer ambalajlamaya etki eden faktörler bu konuda yapılan önceki çalışmalar ışığında derlenmiştir
