Fonksiyonel Gıda Bileşini Olarak Süt ve Süt Ürünlerinde Konjuge Linoelik Asit CLA ve İzomerleri

Abstract

Milk fat is a important source of some biologically active components including conjugated linoleic acid CLA . CLA refers to a mixture of positional and geometric isomers of linoleic acid involving double bonds at positions 9 and 11, 10 and 12 or 11 and 13. CLA isomers have been shown to have different physiological effects such as anticarcinogenic, cholesterol-depressing, antioxidative, growth-promoting and antiobese properties. This review will focus on chemical structure, production and formation mechanisms in milk and milk products and physiological properties of CLA isomers and their potential as functional food ingredients.

Fonksiyonel Gıda Bileşini Olarak Süt ve Süt Ürünlerinde Konjuge Linoelik Asit CLA ve İzomerleri

Abstract

Süt yağı konjuge linoleik asit CLA gibi biyolojik olarak aktif bazı bileşiklerin önemli bir kaynağıdır. CLA terimi ile 9 ve 11, 10 ve 12 veya 11 ve 13 pozisyonlarında çift bağ içeren linoleik asidin pozisyonel ve geometrik izomerlerinin karışımı ifade edilmektedir. CLA izomerleri antikanserojenik, kolesterol düşürücü, antioksidatif, büyümeyi teşvik edici ve antiobez gibi farklı fizyolojik etkilere sahiptir. Bu makalede CLA izomerlerinin kimyasal yapısı, fizyolojik özellikleri, üretimleri ve ürünlerdeki oluşum mekanizmaları mevcut bilgiler ışığında derlenecek ve bunların fonksiyonel gıda ingrediyenti olarak kullanım potansiyelleri değerlendirilecektir.
