In this study, water soluble dry matter, pH and titretable acidity (anhydrous citric acid) parameters, organic acids and sugar contents, of pomegranate juices obtained from five pomegranate cultivars and six pomegranate genotypes grown in Mediterranean Region were determined. Significant variations were found between the pH (2.87-3.92), titratable acidity (% 0.45-1.96), total soluble solids (14.9-16.6° Bx) values of pomegranate juice samples. In pomegranate juice samples major organic acid was citric acid (306.453-1731.615 mg/ 100 ml) followed by malic acid (31.533-185.325 mg/ 100 ml), oxalic acid (25.712-40.431 mg/100 ml) and tartaric acid (0.121-32.427 mg/ 100 ml). In pomegranate juice samples, fructose, glucose, sucrose, maltose and the total sugar content was found between 6.85-7.55 g/ 100ml, 6.88-8.50 g/100 ml, 0.04-0.07 g/100 ml, 0.10-0.13 g/100 ml and 13.90-16.18 g/ 100 ml, respectively.
Bu çalışmada Akdeniz Bölgesi’nde yetiştirilen beş adet nar çeşidi ve altı adet nar genotipine ait meyve sularında suda çözünür kurumadde miktarı, pH, titrasyon asitliği, organik asit ve şeker bileşenleri tespit edilmiştir. Nar suyu örneklerinin pH (2.873.92), titrasyon asitliği (% 0.45-1.96), SÇKM (14.916.6° Bx) değerleri arasında önemli farklılıklar elde edilmiştir. Nar suyu örneklerinde hakim organik asidin sitrik asit (306.453-1731.615 mg/100 ml) olduğu, bunu malik asit (31.533-185.325 mg/100 ml), okzalik asit (25.712-40.431 mg/100 ml)ve tartarik asitin (0.121-32.427 mg/ 100 ml) takip ettiği belirlenmiştir. Nar suyu örneklerinde fruktoz 6.857.55 g/ 100 ml, glukoz 6.88-8.50 g/100 ml, sakkaroz 0.04-0.07 g/100 ml, maltoz 0.10-0.13 g/100 ml, toplam şeker 13.90-16.18 g/100 ml arasında tespit edilmiştir.
