Yapraktan farklı düzeylerde bor uygulamasının ekmeklik buğdayın (Triticum aestivum L.) un kalitesine etkisi

Abstract

Amaç: Ülkemizde tahıl yetiştirilen tarım arazisinde bor, çinko ve magnezyum gibi mikro besin elementlerinin miktarında azalma olduğu bilinmektedir. Söz konusu mineral maddeler buğday kalitesi üzerinde etkilidir. Bu çalışma, Hatay ilinde buğdayın kalitatif özelliklerine bor muamelesinin etkisini belirlemek amacıyla yapılmıştır. Çalışmada, Sagittario çeşidi yumuşak ekmeklik buğdaya (Triticum aestivum L.) farklı düzeylerde (0 [kontrol], 5, 10, 20 ve 40 kg/da) yapraktan seyreltilmiş borik asit uygulaması yapılmış ve bu muamelenin buğdayın bazı kalite özelliklerine etkisi incelenmiştir.
Materyal ve Yöntem: Deneme, tesadüf blokları deneme desenine göre 3 tekerrürlü olarak 2016-2017 yılında, Hatay Mustafa Kemal Üniversitesi Ziraat Fakültesi Tarla Bitkileri Bölümü Araştırma ve Uygulama arazilerinde yürütülmüş, bayrak yaprak ve çiçeklenme dönemlerinde olmak üzere iki kez seyreltilmiş borik asit uygulaması ile buğdayın ekmeklik kalitesinin arttırılması amaçlanmıştır. Bunun için buğday örneklerinin ekmekçilik açısından önemli olan teknik değer ölçütleri belirlenmiştir.
Araştırma Bulguları: Kontrol numunesine göre muhtelif dozlarda borik asit uygulamasının buğdayların fiziksel, kimyasal ve teknolojik özelliklerine etkisi çok sınırlı düzeyde olmuş, belirgin ve anlamlı bir etki tespit edilememiştir (p>0.05).
Sonuç: Araştırmada ele alınan en yüksek borik asit düzeyinin (40 kg/da) buğdayın teknolojik niteliklerinde bir miktar gerilemeye yol açtığı, bunun kullanılan borik asit düzeyinin fazla olmasından kaynaklandığı düşünülmektedir. Araştırmanın çok yıllık olarak ve farklı nitelikteki buğday numuneleri üzerinde uygulanmasının yararlı olacağı düşünülmektedir. Bundan sonraki yapılacak olan çalışmalarda yaprak yerine toprağa borik asit uygulaması yapılmasının ürün kalitesine etkisi araştırılabilir.

The effect of foliar application at different boron levels on the quality of bread wheat (Triticum aestivum L.) flour

Abstract

Objective: It is known that there is a decrease in the amount of micronutrients such as boron, zinc and magnesium in the agricultural land in where grain is grown in Turkey. These mineral substances have an effect on wheat quality. This study was conducted to determine boron response to the qualitative traits of wheat in Hatay Area. In this study, Sagittario soft bread wheat (Triticum aestivum L.) was used as material and foliar diluted boric acid application at different levels (0 [control], 5, 10, 20 and 40 kg/da) applied to it and the effect of this treatment on some quality properties of wheat was investigated.
Materials and Methods: The experiment was carried out in the season of 2016-2017 in Hatay Mustafa Kemal University Agricultural Faculty Field Crops Department Research and Application Area. Field study was arranged as a randomized block design with three replications. Boric acid applied foliar application at two growing stages (flag leaves and flowering time) for aimed to increase the bread quality of wheat. For this purpose, the technical value criteria of wheat samples that are important for bread making were determined.
Results: According to the control sample, the effect of various doses of boric acid on the physical, chemical and technological properties of the wheat was very limited and no significant (p>0.05) and meaningful effect has been detected.
Conclusion: The highest boric acid level (40 kg/da) discussed in the experiment caused some reduction in the technological characteristics of the wheat and it is thought that this was due to the excessive boric acid level used. It is thought that it will be beneficial to apply the research on a multi-annual and different wheat samples. In future studies, the effect of boric acid application on the soil instead of foliar on product quality can be investigated.
