Abstract

Gıda güvenliği bugün yalnızca gelişmiş ülkeler
de değil, tüm dünyada
uluslararası bir standart ve zorunluluk olarak kabul edilmekte ve pek çok ülkede
üretim maliyetlerinin düşürülmesi, verimliliğin arttırılması, ithalat ve ihracatın
geliştirilmesi yönünde hedeflerin gerçekleştirilmesi için bir ön koşul
olarak
değerlendirilmektedir.
Günümüz koşullarında modern hizmet vermeyi amaçlayan konaklama
işletmelerinin mutfak ve servis bölümleri ile çalışanları, gıda üretim ve
sunumunda hijyen ve sanitasyon kuralları çerçevesinde, standart ölçülerde ve
riskleri
de en aza indirmeyi amaçlayan Kritik Kontrol Noktalarında Tehlike
Analizleri (HACCP: Hazard Analysis Critical Control Points) sistemini
uygulamaktadır. Gıda güvenliğinin sağlanmasında etkili ve önemli bir yöntem
olan HACCP sistemi, yiyecek
-
içecek endüstris
inde mikrobiyolojik, fiziksel ve
kimyasal tehlikelerin yok edilmesinde etkin rol oynamaktadır. Çalışmada
konaklama işletmelerinde gıda güvenliği ayrıntılı olarak ele alınarak, İzmir ili
Çeşme ilçesinde faaliyetlerini sürdüren turizm belgeli konaklama işlet
melerinde
gıda güvenliği ve HACCP ile ilgili uygulamalar değerlendirilmiştir.

Abstract

Food safety is considered as a necessity and international standardization not
only in developed countries, but also all over the world today and is evaluated as a prerequisite for achieving the goals of decreasing production costs, increasing productivity efficiency and developing export and import.
Today, the kitchen and service units in accommodation establishments aiming to offer a high-quailfied service and its staff have been applying the HACCP system in production and presentation of the food within the terms of hygiene and sanitation. The HACCP system,which is an efficient and important way of providing food safety, plays an important role on the elimination of
microbiological, physical and chemical hazards in food and beverage industry.
In this study, discussing the food safety in details, the applications and implementations of food safety and HACCP in tourism licensed hotel establishments in the district of Izmir, Cesme have been evaluated
