GIDA İŞLETMELERİNDE KULLANILAN DETERJANLAR

Abstract

Toplu beslenme hizmetinden yararlanan kişi sayısının gün geçtikçe artması ve bireylerin günde en az bir öğününü bu hizmetlerden karşılıyor olması gıda işletmelerinin önemini her geçen gün arttırmaktadır. Hem tüketici sağlığını koru-mak hem de ürünlerin raf ömrünü uzatmak için gıda işletme-lerinde kontaminasyon kaynağı olabilecek faktörler mini-muma indirilmelidir. Bu amaçla da Toplu Beslenme Sistem-lerinde deterjanlar sıklıkla kullanılmaktadır.

DETERGENTS USED IN FOOD MANAGEMENT

Abstract

Increasing number of people benefiting from the institution-al food service systems and individuals supply at least one meal a day from these services increases the importance of food enterprises day by day. Factors that may be the source of contamination in food enterprises should be minimized to protect both the consumer health and the shelf life of the products. For this purpose, detergents are frequently used in Institutional Food Service Systems.
