An investigation for campylobacter species of water exiding out of carcesses and chicken carcasses processed in poultry abattoirs in Ankara Province.

Abstract

This study was undeıtaken to establish thermophilic Campylobacter species
in chicken intestines, carcasses and in waterusedin poultry processing.
For this purpose, samples obtained at vazrious stages of slaughter in poultry
abattoirs in Ankara Province were inoculated on modified Preston Selective
Media. Following an ineubatian period of 48 hours at 42 oc in a
microaerophilic atmosphere, microorganisms w ere identified for Campylobacter
species by means of growth and biochemical tests.
Campylobacter species were isolated from 76,9% of the swabs taken from
450 chicken carcasses during the slaughter.
None of 91 water samples collected from hot water tanks revealed
Campylobacter species. Although 1 O water samples collected from cold w at er
tanks before the slaughter.
Campylobacter species, 63 out of 81 water samples collected during the
s l a ugtıter w ith one ho ur intervals gave Campylobacter species.
Campylobacter species were detennined on 126 of 150 intestine samples
and on 79 of 100 water samples from water exuding out of the carcasces.
Of the isolated 614 Camoylobacter strains, 45.6% and 54.3% w ere evaluated
as C.coli and C. jejüni, respectively.
The presence of a large number of campylobacter species on examined
samples (chicken carcasses, intestines and water used in poultry processing),
it has show n that commercially processed chickens are frequently contaıninated
by this organism and therefore, chicken ıneats serve as important
v e lıicles of human campylobakter infections.

Ankara İli ve Çevresinde Bulunan Kanatlı Mezbahalarında Kesilen Tavuklara Ait Karkasların ve Mezbaha Atık Sularının Campylobacter Etkenleri Yönünden İncelenmesi

Abstract

Bu araştırmada, termofilik campylobacter türlerinin tavuk karkaslarında,
mezbaha sularında ve barsaklarda belirlenmesi amaçlanmıştır.
Çeşitli özel ve kamu mezbahalarında kesimin değişik safhalarında alınan
örnekler Modifiye Preston selektif besiyerine ekilmiş , mikroaerofilik koşullarda
42 °C'de 48 saat inkübasyondan sonra üreyen mikroorganizmalar
Campylobacter türleri yönünden üreme ve biyokimyasal testler ile identifiye
edildi.
Kesim aşamasında karkasların göğüs derisine steril swab sürülerekalınan
450 adet örneğin %76.9'undan Campylobactertürleri izole edilirken sıcak su
tankından alınan 91 su örneğinin hiç birinde izolasyon yapılamamıştır.
Soğuk su tankından kesimden önce alınan 10 su örneğinde de izolasyon
yapılmazken, kesim esnasında her seferinde birer saat arayla, üç defa alınan
81 su örneğinin 63 ünde Campylobacter izole edilmiştir.
Karkaslardan süzülen sulardan alınan 100 örneğin 79'unda, 150 adet barsak
örneğinin 126'sında , Campylobacter tespit edilmiştir.
izole edilen 614 Campylobacter suşunun %45 . 6'sı C. coli , %54.3'ü C. Jejuni
olarak identifiye edilmiştir .
incelenen örneklerde (karkas, su, barsak) yüksek sayılabilecek oranda
Campylobacter tespit edilmesi, tavuk etinin insan Campylobacter infeksiyanları
yönünden ne kadar önemli bir kaynak oluşturduğunu göstermektedir.
