PİYASADA SATILAN YOĞURTLARIN FİZİKOKİMYASAL, MİKROBİYOLOJİK VE ADE-İNHİBİTÖR AKTİVİTELERİNİN BELİRLENMESİ

Abstract

Bu çalışmada, Erzurum piyasasında satılan 12 adet farklı ticari yoğurt örneğinin fizikokimyasal, mikrobiyolojik ve reolojik özellikleri ile Anjiyotensin Dönüştürücü Enzim (ADE)-inhibitör aktiviteleri belirlenmiştir. Yoğurtların kurumadde, yağ, protein, serum ayrılması, pH ve viskozite değerleri %11.11-18.05, %1.25-4.70, %3.28-4.66, 0.95-9.00 ml/25g, 3.79-4.61, 7913.0-30425.0 cP aralığında değişmiştir. Mikrobiyolojik analiz sonuçlarına göre yoğurtların L. bulgaricus ve S. thermophilus sayıları ise sırasıyla 5.67-8.32 ve 6.12-8.5 log kob/g aralığında bulunmuştur. Yoğurtların ADE-inhibitör aktivite % ve IC50 analiz sonuçları sırasıyla %55.57-77.90 ve 0.91-1.80 mg/ml arasında değişim göstermiştir. Yoğurt örneklerinin hepsi ADE-inhibitör aktivite göstermiş ve sonuçlar arasında önemli farklar (P <0.05) olduğu ortaya konulmuştur.

DETERMINATION OF PHYSICOCHEMICAL, MICROBIOLOGICAL, AND ACE-INHIBITORY ACTIVITIES OF YOGURTS SOLD IN THE MARKET

Abstract

In this research, physicochemical, microbiological, and rheological properties and Angiotensin Converting Enzyme (ACE) inhibitory activities of 12 different commercial yogurt samples sold in Erzurum market were determined. Dry matter, fat, protein, serum separation, pH and viscosity values of yogurts varied between 11.11-18.05%, 1.25-4.70%, 3.28-4.66%, 0.95-9.00 ml/25g, 3.79-4.61, 30425.0-7913.0 cP, respectively. According to microbiological analysis results, L. bulgaricus and S. thermophilus counts of the yogurts were determined between 5.67-8.32 and 6.12-8.5 log cfu/g, respectively. The ACE-inhibitory activity analysis results of yogurts were determined as % and IC50, and their values varied between 55.57-77.90% and 0.91-1.80 mg/ml, respectively. All yogurt samples showed ACE-inhibitory activity and significant differences (P < 0.05) were determined between the results.
